Caramel Filled Chocolate Cookies

These caramel filled chocolate cookies have a Rolo candy baked in the center. Aren’t they a pretty cookie? I love the way they look. This is an impressive looking cookie and the best part is they taste as great as they look! A friend from church brought these to me one time years ago. I remember my husband was out of town and I had two little boys that were both sick. I was exhausted and these cookies really made my day! I LOVED them so much and seriously appreciated my sweet friend who dropped them by! She had no idea how much I needed a little lift at that time! I ended up getting the recipe from her and every time I make them, it makes me smile thinking of that first time I tried them!

Recently, I made these Caramel Filled Chocolate Cookies for a Super Bowl watching party we went to and realized I had shared them yet. I actually took this picture with the plate on my lap in the car on our way! I think these would be a great recipe to make someone for Valentines Day coming up! I love that Holiday. Caramel Filled Chocolate Cookies

Ingredients

2 1/2 c. all purpose flour
3/4 c. unsweetened cocoa
1 tsp. baking soda
1 c. sugar
1 c. firmly packed brown sugar
1 c. softened butter
2 tsp. vanilla
2 eggs
1 c. chopped almonds, or pecans
48 Rolo (caramels in milk chocolate), unwrapped 9 oz. pkg.
1 tbsp. sugar
4 oz. vanilla flavored candy coating (opt.)

Instructions

Heat oven to 375 degrees. Lightly spoon flour into measuring cup and level off. In a small bowl, combine flour, cocoa and baking soda; blend well.
In a large bowl, beat 1 cup sugar, brown sugar and butter until light. Add vanilla and eggs; beat well. Add flour mixture, blend well. Stir in 1/2 cup of the pecans.
For each cookie with floured hands, shape about 1 tablespoonful dough around 1 Rolo, covering completely.
In a small bowl, combine remaining 1/2 cup pecans and 1 tablespoon sugar. Press one side of each ball into pecan mixture. Place nut side up, 2″ apart on an ungreased cookie sheet.
Bake at 375 degrees for 7 to 10 minutes or until set and slightly cracked. Cool 2 minutes. Remove from cookie sheet to cool on wire rack. Melt the vanilla flavored candy coating in a saucepan or in a baggie in the microwave. Drizzle over cookies.

    I’ve made these before, Mel, since you gave me this recipe a while ago. And I can attest that they are SO WONDERFUL. I love chocolate cookies – they are my fave. The way you drizzled white chocolate on top of them makes them stunning!

    We never would have known those cookies were on your lap, but now that you mention it, I guess you were wearing jeans! They look fab- I’ll try them out! I’ve done a sugar cookie with a milk dud inside- they were good too.

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience!
