Snickerdoodle Muffins

Last week my little boys and I were in the mood for muffins and so I came up with these little Snickerdoodle Muffins –a fun twist on some of our favorite cookies. My little sweeties loved them. They really hit the spot.  My boys especially loved the butter dipped cinnamon sugar tops. I made them into mini muffins and we snacked on them all day. You could of course make them in to regular sized muffins, but these bite sized ones were perfect in our opinion (a good cinnamon sugar topping ratio)! Hope you enjoy!

Ingredients

Scale
  • 3 cups of all-purpose flour
  • 1 Tbsp baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 10 Tbsp unsalted butter (1 1/4 stick), softened
  • 1 cup sugar
  • 2 large eggs
  • 1 cup vanilla yogurt
  • 1/2 cup buttermilk
  • Topping:
  • 1/4 cup melted butter
  • Small bowl of cinnamon sugar mixture

Instructions

  1. Preheat oven to 375°F.
  2. Whisk together the flour, baking powder, baking soda, and salt and set aside.
  3. In a large mixing bowl, cream butter and sugar together, beating until fluffy (about 2 minutes with an electric mixer). Add eggs one at a time, beating until incorporated after each one. Add the vanilla yogurt and buttermilk .
  4. Now add the dry ingredients. Mix until all is moist. Do not over beat.
  5. I used a mini muffin muffin pan and had enough batter to make 2 batches. Spray each muffin tin with cooking spray or brush with butter. Distribute the muffin dough equally among the cups. Bake until muffins are golden brown, about 10-13 minutes(20 for regular size muffins). Test with a long toothpick to make sure the center of the muffins are done. Set muffin pan on wire rack to cool. After 5 minutes, remove muffins from pan.
  6. While the muffins are cooling, melt 1/4-1/2 cup of butter and prepare a bowl of cinnamon sugar. While the muffins are still a bit warm, dip the top of the muffins in the melted butter and then in the bowl of cinnamon sugar. Enjoy!

    Melanie,
    I tasted these little happy muffins on the Happy Cart at school and had to search out the recipe. I’ll be making these for folks I want to make happy!

    Hi Mary,
    I did not check my email yesterday, so I am just barely getting your message. Hopefully the muffins worked for you yesterday. Yes all 10TB os butter go into the batter and then you melt some additional butter for the topping.

    Hi!
    I was just about to make these muffins, but had a question. The recipe calls for 10 Tbl of butter – does this mean all 10 Tbl go directly into the batter, and then an additional amount for the topping? Or is it 10 Tbl total?

    Hey Sandra, I'm not sure what Melanie has tried, but since you are wanting to make these right now, I will give you my two cents. 🙂 If I am in a pinch, I will sometimes substitute half sour cream and half buttermilk for an amount of vanilla yogurt that a muffin/sweet bread recipe calls for. Or if I am out of sourcream, sometimes I will substitute half buttermilk and have yogurt. So, anyway, give it a try and I bet it will turn out okay. Good luck! (PS If you have no sourcream, just try buttermilk – it will make it more wet and may increase baking time, but I would still try it if you really want to make the recipe without having any yogurt. Of course, I would recommend using the correct ingredients in the first place, but we all get in a situation every now and then when we just don't have an ingredient on hand!)

    i was wondering can i just use the buttermilk instead of the vanilla yogurt? since i dont have some on hand and would realley like to make these right now.

    I made these for a prayer meeting at my house tonight. There are so yummy. I love the texture and vanilla flavoring from the yogurt.

    I am now a hero! I made this muffins for Bible Study tonight and the rants and raves about this muffin were amazing. The texture was soooo nice. I have made similar muffins but this recipe wins hands down! Thank you!

    I am glad you liked this recipe! I did create this recipe –but don't be too impressed, I based it off the lemon poppyseed recipe. I thought snickerdoodle muffins sounded fun. I am glad you found our little site!

    I just made snickerdoodle cookies! I have a muffin recipe similar to yours but we call it Cinnamon&sugar muffines..my son loves them too! Nice!

    These sound so yummy! We have a snickerdoodle cake that is one of our Christmas time favorites. It has just the right infusion of cinnamon and is topped with a delicious cinnamon buttercream.

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side.
