The recipe for these little balls of goodness come from my friend Karen. If you are a fan of nuts, coconut and chocolate you will LOVE these! They are a fun and healthy alternative to a cookie. I love that they are sweetened naturally with agave and honey and that they use coconut oil which has so many health benefits. And best of all these are really tasty–I promise:) Enjoy!

Description

 If you are a fan of nuts, coconut and chocolate you will LOVE these! They are a fun and healthy alternative to a cookie. 


Ingredients

Scale
  • Coco-Nutties
  • submitted by Melanie
  • 2 C. pecans
  • 1/4 C. coconut oil
  • 3 Tb. agave
  • 3 Tb honey
  • pinch of salt
  • 1 tsp vanilla
  • 2 C unsweetened shredded coconut
  • 1 C chopped chocolate

Instructions

  1. Pulse nuts in blender
  2. Take out and add everything to a bowl
  3. Make into balls and chill or freeze until ready to serve.

    I just made these and they didn't hold their shape in a ball. They fell apart. Still delicious though! Any suggestions?

    I use semi sweet chocolate chips–because that is what I keep on hand–but I would think any chocolate would be great!

    I will have to count the next time I make them–but I would guess around 2 1/2 – 3 dozen!

    These sound like something Griff would like. And I lvoe that you don't have to bake them… it has been hot around here today and so turning the oven on sounds terrible. 🙂

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side.
