Peach Praline Muffins

These Peach Praline Muffins are soooo good!  Sun ripened peaches, pecans with a hint of brown sugar and vanilla… totally fantastic!  Especially hot out of the oven or popped into the microwave for 10 seconds before enjoying them.  (PS Peaches are surprisingly good baked into muffins.  The consistency stays similar to fresh, not mushy.  I haven’t tried it with frozen peaches, but I am definitely going to this winter.  I’ll let you know how it goes… or if any of you try it first, let me know!)

Ingredients

Scale
  • 1 2/3 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup packed brown sugar
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup chopped fresh or frozen (thawed and drained) peaches
  • 1/2 cup chopped pecans

Topping:

  • 1/4 cup packed brown sugar
  • 1/4 cup chopped pecans
  • 1 tablespoon cold butter

Instructions

  1. In a large bowl, combine the flour, baking powder and salt.  In another bowl, combine the brown sugar, milk, oil, egg and vanilla.  Stir into dry ingredients just until moistened.  Fold in peaches and pecans.  Fill greased or paper-lined muffin cups two thirds full.  Combine topping ingredients until crumbly sprinkle over batter.  Bake at 400 degrees for 15-18 minutes or until a toothpick comes out clean.  Cool for 5 minutes before removing from pan to a wire rack.

    These muffins are so good! My family loved them–I doubled the recipe and they still disappeared. And I even used white whole flour instead of all purpose and substituted half the oil for plain yogurt. Thanks for posting this recipe to help me use up the big box of peaches I bought at the farmers' market.

    Pretty picture Mind. Mindy had us for dinner last night and served these yummy muffins! They were awesome!! I've never had a peach muffin before and really liked these! If only I had a peach tree like yours…someday someday.

    Sound delish !!!!!!!!!! I have been reading your blog for a few months now..and Love every bit of it . I live in Western Ny and we have a Peach Festival beginning of Sept. they always has a Taste off Well I have won 2 years in a row …my recipe was Praline Peach Cobbler Cake..I used toffee bits ontop ..Just thought it was cute when I seen your post for today .,Keep the great recipes coming

Tribute to my sweet Mom
