Swamp Juice is hands down my favorite Halloween beverage… especially for a party!  There is just something so wonderfully disgusting about that bottom layer of fish eggs made from tapioca pearls and the little swamp creatures “swimming” through them.  And the dry ice is a must to make the swamp juice come alive! It finishes the effect by adding that spooky mist that we all imagine when we picture a bog in our mind.  Halloween is tomorrow, so run to the store now to get all the ingredients.  You won’t be sorry.  In fact, I guarantee your swamp juice will make a memory that children and adults alike will remember and love!

Now here are a few practical pointers:
The tapioca and gummy creatures stay at the bottom of the glass while drinking, so even non tapioca lovers should be able to drink this happily.  If you plan to eat the tapioca, use a spoon.
I have both dyed and not dyed the eggs, and I like it both ways.  The clear pearls almost look more convincing to me, but the colored pearls look a little better with a clear beverage as pictured above.
The bottom picture uses green kool aid, which turned out to be more opaque than I expected.  So I just added some lemonade to it, and it turned out to be one of my favorite colors of swamp juice.  Sprite mixed with kool aid tastes a little better to me, though.  Pink lemonade made surprisingly good swamp juice last year, too.
Don’t be afraid to use bits of dry ice in each glass.  The effect is amazing, and it only takes a few minutes for the dry ice to bubble itself away.  Worth the effect for sure.

Description

Swamp juice is a fabulous Halloween drink that will delight your little ghosts and goblins!


Ingredients

Scale
  • 1/2 cup small tapioca pearls (found near the instant pudding at most grocery stores)
  • Food coloring (optional)
  • Beverage of choice (kool aid, lemonade, sprite, etc)
  • Gummy fish (Swedish Fish, JuJu Fish work great)
  • Gummy worms
  • Dry Ice

Instructions

  1. To make the eggs, bring 6 cups of water to a boil and add the tapioca pearls.  Reduce the heat slightly and boil the pearls, stirring occasionally, for 20 to 25 minutes.
  2. If desired, color the eggs by dividing the eggs into separate bowls (with their cooking water) and adding 4 drops of food coloring to each bowl.  Green, blue, and yellow are all great colors.  Stir the mixtures and allow to sit for 20 to 25 minutes to soak in the coloring. Then drain and rinse with cold water.
  3. To assemble the swamp juice in a punch bowl, deposit the “egg” pearls to the bottom of the punch bowl.  Cover with beverage of choice and drop in the gummy fish and worms.  Add dry ice for effect.
  4. To assemble individual glasses, spoon ~2 tablespoons of “egg” pearls into each glass.  Fill the glass with beverage of choice.  Drop in 1-2 gummy fish and/or worms.  Top with one worm coming out of drink.  Break the dry ice into nickel sized pieces and drop one into each glass just before serving.  (Remember to warn your guests to wait until the swamp juice quits bubbling before they drink it).

    This was a BIG hit with the grandkids at tour Halloween party! We used the regular tapioca and it turned out perfect! Really fun idea! 5 STARS!

    How fun!!! We’ve done ‘swamp juice’ before but it was just green punch with Swedish fish candies, but I love the ‘fish egg’ touch! BTW, great pics!

    I made this with the minute tapioca and had the same problem. I made it again later with regular small pear tapioca and it turned out perfectly. Thanks for the recipe. We loved the idea, it was so much fun for Halloween!

    I’m bummed out that your pearls didn’t work out. I am not sure what happened, but here are a few ideas:
    -Did you stir occasionally while cooking?
    -Did you use minute tapioca instead of the regular small pearl tapioca (I used Bob’s Red Mill that I bought at my local grocery store, Kohler’s)
    -Did you rinse the pearls after cooking with cool water? Mine look sort of congealed together after cooking. However, after rinsing and spooning into the cups/punch bowl, the pearls are perfect. They are discrete, separate balls, but they kind of cling to one another a little and look just like fish eggs!

    I hope the tapioca pearls work out for you next time. If you try again, stop by to let us know how it turns out. Maybe your experience will help someone else out who has the same problem! 🙂
