White Chocolate Lime Macadamia Nut Cookies

Happy Friday!

Here in Tennessee “Spring has Sprung” and I couldn’t be happier about it!  The sun is out, my tulips are popping up and it is projected to reach a warm 75 today!  The perfect start for the weekend!  I am not sure if you have sunny weather where you are, but I have a fun recipe that will brighten your day no matter! Today I am sharing a sweet twist on one of my favorite treats of all time–White Chocolate Lime Macadamia Nut Cookies.  

My friend Wendy came up with the brilliant idea to add LIME zest and it takes this classic cookie to a whole new level!  I was introduced to these at a Valentines Party last month.  Everyone had brought dishes to add to the buffet and Wendy (knowing my LOVE for cookies–they really are my favorite dessert!) brought me one of these amazing cookies to try.  OH my –one bite and I felt like I was transported back to Hawaii…

Trust me these White Chocolate Lime Macadamia Nut Cookies are divine!   I loved the original but the addition of lime zest adds a bright, refreshing element to the cookie.  The perfect cookie for Spring!  

What you need for White Chocolate Lime Macadamia Nut Cookies:

  • Butter
  • Granulated Sugar
  • Brown Sugar
  • Eggs:
  • Vanilla Extract
  • All-Purpose Flour
  • Baking Soda:
  • Salt
  • White Chocolate Chips
  • Lime Zest
  • Macadamia Nuts

(Now if you are a purist, or just in the mood for the classic, you can, of course leave the lime zest out and have a perfectly wonderful White Chocolate Macadamia Nut cookie!)

Extra large cookie sheet (fit more cookies on it and fits in the oven perfectly!)

Parchment paper (pre cut for the larger size cookie sheet)

Ingredients

Scale
  • 1 cup (2 sticks) butter, softened
  • 1 cup sugar
  • 3/4 cup brown sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup white chocolate chips
  • 1 cup macadamia nuts
  • Zest from one lime

Instructions

  1. Preheat oven to 375
  2. Cream together the butter and sugar until light and smooth.
  3. Add the vanilla and eggs and beat until well combined.
  4. Stir in the flour, salt and baking soda and mix just until combined. Be careful not to overstir the batter. Once you add the flour you want to stir as little as possible.
  5. Add the white chocolate chips, macadamia nuts and lime zest and mix until combined.
  6. Chill dough for 30 minutes to a couple of hours OR I have found if I store my chocolate chips in the freezer they instantly chill the dough when added.
  7. Drop by rounded spoonfuls (about a Tablespoon or a little bigger) onto a cookie sheet lined with parchment or a silat about 2 inches apart.
  8. Bake for 10-12 minutes. If you like softer cookies remove from the oven when the edges start to turn golden. If you like them crispier leave in for longer.
