An Immunity Boost in a Jar: Lemon, Ginger and Honey

Well it is officially Spring, as of yesterday!  Here in Tennessee we welcomed Spring with freezing temperatures…brrrrr!  All last week was sunny, warm and gorgeous so Saturday morning I assumed more of the same and took off for soccer games in capris!  Big mistake–I spent Saturday shivering and Sunday sneezing!  It is so frustrating to start Spring off with a darn cold, grrrr!  All winter I had this lemon, ginger and honey elixir in my fridge and would enjoy a couple of spoonfuls most mornings in a hot cup of water.  Whenever my boys weren’t feeling well I would make them up a cup too.  We have a family tradition of a Lemon and Honey drink which is very similar to this, but I love the addition of the spicy ginger.  It is tasty and chock full of health benefits that will nurture your body whether you are under the weather or not.  If you do some research on the ingredients you will find so many health benefits.  Here are a few:

Lemon: Lemon is an excellent and rich source of vitamin C, an essential nutrient that strengthens the bodies immune system.   It also serves as a powerful antibacterial.  Having warm lemon juice early in the morning helps flush out toxins. It helps prevent the growth and multiplication of bacteria that cause infections and diseases.  It helps reduce pain and inflammation in joints and knees as it dissolves uric acid.  It helps cure the common cold.

Ginger:  Can help lower the risk of infections. In fact, ginger extract can inhibit the growth of many different types of bacteria.  It is very effective against the oral bacteria linked to gingivitis and periodontitis.  Fresh ginger may also be effective against the RSV virus, a common cause of respiratory infections.  Ginger is effective in reducing nausea and menstrual pain too!

Raw Honey: Raw honey offers incredible antiseptic, antioxidant and cleansing properties.  Its powerful healing attributes have long been used thousands of years ago and known to promote healing for cuts, cure ailments and diseases, and correct health disorders in many different cultures.  In addition, it is often used for treating digestive problems such as diarrhea, indigestion, stomach ulcers and gastroenteritis. Raw honey is also a natural cough suppressant.

The list could go on.  I find the idea of food being medicine very interesting, don’t you?  Putting the health benefits aside though, this drink is good!  It is a comfort when you aren’t feeling well and a wonderful way to warm up on a cold morning!  I only had one lemon so I made a mini glass jar, but I would recommend a larger batch since it lasts so long.  I used a 12oz jar during the winter.  It lasted us about 6 weeks.

Ingredients

  • Fresh lemon slices
  • fresh ginger peeled and sliced
  • Raw Honey
  • Glass jar with a lid

Instructions

  1. Layer the lemon slices and ginger slices, alternating to fill the glass jar.
  2. Pour the raw honey over top, allowing it to fill the spaces between lemon and ginger until glass is full.
  3. Cover with lid and store in fridge for 4-6 weeks.
  4. Over time the mixture will form into a loose jelly.
  5. Whenever you want a soothing cup of “tea”, simply add a couple of tablespoons to some hot water.
  6. You can add a slice of lemon and ginger too. Allow to steep for several minutes and enjoy.
