Menu PlanThe boys are back in school this week–phew!  I am ready to be back on a regular  schedule again!  Did I mention that we had only one day of school last week–hah?!  No snow or ice in the forecast this week, just rain, so school should be on.  This morning I finished up my weekly menu plan for this week and made a list for the grocery store.  I love to get organized and do as much meal prep ahead of time as possible.  My evenings get busy and having a plan helps tremendously.  Tonight we are having some friends over and our local missionaries for dinner.  I have set the dining room table and started the chicken parmesan.  I have also made zucchini noodles as an option for tonight.  I am looking forward to dinner!  What are you making this week?

Here is what is on my menu:

Monday:  Chicken Parmesan ( this is an amazing recipe but the post could use some new pictures). I am going to serve it with angel hair pasta and ‘zoodles’ (zucchini noodles).

Tuesday:  Pulled Pork  with Cilantro coleslaw

BBQ pork with cilantro slaw

Wednesday: Tuscan Lentil Soup

Tuscan Lentil Soup

Thursday:  Chili Verde (using pulled pork leftovers)

Friday:  PIZZA–I am going to make this Pesto Chicken with Pinenuts and Feta

Saturday–Date Night–out

Perfect Pot Roast

Sunday:  Classic Pot Roast with Wonderful Mashed Potatoes

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side. Thank you Mom! You instilled in me a respect for work as well as a joy in creating delicious things. I love you! xoxo
