Banana Caramel Cream Pie

Did you know that tomorrow is Pi Day (3.14)?  It is the perfect reason to make a pie to enjoy with your family and to brush up on some math!  This Caramel Banana Cream pie is what I am making and my family is very excited!!

I originally posted the recipe for this incredible Caramel Banana Pie (also called Banofee pie ) here in 2012.  It is SOOO good that I decided to share it again with a gluten free option this time!  The filling is naturally gluten free, but the crust needed to be adjusted if you cannot have gluten (like a couple of my boys). In England this pie is called Banoffee, made with dulce de leche, from cooking a can of sweetened condensed milk! Have you every don’t that?  It is like magic!  I still cannot believe that glorious caramel is simply a can of sweetened condensed milk that has been cooked!  So cool!

I like to cook several cans at once, and store the extra cans in the pantry.  That way I have dulce do leche on hand and can use it for a fun fruit dip, topping for ice cream, or make this wonderful pie whenever I want!  This has pie is hand down our family’s  favorite pie!  In fact, my son Coleman, makes it himself every year for one of our Thanksgiving pies.  Today I am also sharing the recipe for the almond flour crust–gluten free and seriously yummy!!  My whole family loves it!

Add some shaved chocolate or chocolate curls on top to really take it up a notch!  Your family and friends will be so impressed and feel extra special being served a slice of this beautiful pie!  Trust me, no one will ever guess how easy and fast it is to make!  That can be our little secret!

Description

Banana Caramel Cream Pie is also known as Banoffee Pie in England. Caramel, banana slices, whipped cream and chocolate curls.


Ingredients

Scale
  • 1 graham cracker or Gluten Free Almond Crust **(see recipes below)
  • 3 Bananas sliced
  • 1 can sweetened condensed milk, cooked
  • 1 cup whipping cream whipped with 1-2 TB powdered sugar until stiff peaks form
  • **!Pie Crusts:

Graham Cracker:

  •  1 1/2 cups finely ground graham cracker crumbs (about 12 full sheets crushed)
  • 1/3 cup white sugar
  • 6 Tablespoons butter, melted

Gluten Free Almond Crust:

  • 1 1/2 cup almond flour
  • 1/4 cup white sugar
  • 1/4 teaspoon salt
  • 4 Tablespoons butter, melted

Instructions

To make the caramel or Dulce de Leche:

Stove Top Method **(my preferred method):

  1. Remove the label from can of sweetened condensed milk. Put in pot and cover completely with water. Bring to a boil and reduce heat to a simmer. Cook for 2 1/2 hours. Be sure to keep the can totally covered in water to be safe. The can will burst if it is not completly covered in water the whole time! Be careful!! When cooled enough that you can handle with can with your bare hands, it is safe to open.

Crock Pot Method:

  1. Take the label of the can and place in crock pot. Cover completely with water. Put lid on and cook on low for 8-10 hours. Just once again make sure there is plenty of water and the cans are covered the entire time! Cool before opening.

Caramel Banana Cream Pie Directions:

  1. Slice the bananas into your pie shell. It does not matter how, just make sure it is somewhat even. Pour the cooled caramel over the banana slices. Cover in sweet whipped cream and garnish with shaved chocolate. Viola! That is it and you have a MAGICAL incredible dessert! Enjoy:)

**Pie Crusts:

Graham Cracker Crust:

  1. Mix graham cracker crumbs, sugar, and melted butter until well blended .
  2. Press mixture into an 8 or 9 inch pie plate.
  3. Bake at 375 degrees for 7 minutes.
  4. Cool.

Gluten Free Almond Crust:

  1. In a medium bowl, whisk together almond flour, sweetener, and salt. Stir in melted butter until dough comes together and resembles coarse crumbs.
  2. Turn out into a glass or ceramic pie plate. Press firmly with fingers into bottom and up sides. Use a flat bottomed glass or measuring cup to even out the bottom. Prick all over with a fork before baking.
  3. To bake at 325F until edges are golden brown, about 20 minutes.

    This has become our favorite pie! I do a regular pie crust instead of a graham cracker crust and I buy already made dulce de leche to make my busy life a little simpler!
