Egg and Grits Breakfast Bowl

Have you ever had the pleasure of an Egg and Grits Breakfast Bowl to start your day off?  If you have not experienced this wonderful dish, then let me tell, you are missing out! I like it with Canadian Bacon or ham, but you could use crispy bacon, crumbled sausage or even your favorite sautéed veggies.

I was first introduced to grits after moving to the South 9 years ago, but before that I had never even tasted them! Grits are true Southern classic and I have learned to love them. I especially love to top creamy, cheesy grits with diced ham or crispy chopped bacon, a perfectly fried egg (I will share my technique soon)  and some fresh green onion. This simple grits bowl is a great recipe to prep in advance for busy weekday mornings too.  Make the grits ahead of time and cook the egg in minutes!

My oldest son served his LDS mission in the South (Tallahassee Florida Mission which also covers southern Georgia and Alabama) and learned to love grits. This is a dish he loves to make now on his own at college for dinner.  Quick, easy and hits the spot every time!

Ingredients

Scale

Base Grits

  • 1 cup whole milk
  • 4 cup water
  • 1 tsp. kosher salt
  • 1 cup uncooked stone-ground grits
  • 2 tbsp. unsalted butter
  • ¾ cup whole buttermilk

Breakfast Bowl

  • 1 cup shredded pepper jack cheese
  • Diced ham, or cooked bacon, crumbled
  • 1 fried egg
  • sliced green onions or chives (optional)
  • Ground Pepper (optional)

Instructions

Grits:

  1. Bring milk, salt, and 4 cups water to a boil in a medium saucepan over medium-high heat. Gradually whisk in grits; return to boil. Reduce heat to medium-low, and simmer, stirring occasionally, 25-30 minutes or until creamy and thickened. Remove from heat, and stir in butter and buttermilk. Cover to keep warm until ready to serve.

* to lower fat content of grits I sometimes use 1% milk and low fat buttermilk–not as creamy but still good. Also–you can buy instant grits which are very quick–just follow directions on package.

Breakfast Bowl:

  1. Add pepper jack cheese (or cheese of choice–cheddar is very good). Serve in a bowl with one cup of grits, sprinkled with ham/bacon/sausage (meat of choice), topped with a fried egg and green onions or chives (if desired)

Tribute to my sweet Mom
