Since I usually menu plan on the weekend,  I thought I should start sharing my menu plans on Friday instead of Monday, in case you do too! It has been awhile since I shared a menu plan–but, I am going to try to post them more often!

Weekly Menu

Monday: buddha bowl

Buddha Bowls (with grilled chicken instead of tuna and lots of veggies)

Tuesday:

Fiery Fish Tacos with Crunchy Corn Salsa
( don’t let the name fool–the spice is completely adjustable to your taste! My kids love these!)

Wednesday:Pasta Alla Trapanese

Pasta Alla Trapanese 
This is most unique and flavorful sauce and I can use all the little cherry tomatoes that are going out of my garden like crazy!!

Thursday:Better than Takeout Fried Rice

Better than Takeout Fried Rice
with fresh fruit on the side!

This is a fabulous recipe that my whole family loves! Don’t forget to make your rice the day before or at least in the morning. It is best if it has had time to dry out a bit.

Friday:Quick and Easy Pizza

Pizza Night

this is a tradition that we always have pizza every Friday

Sunday:

I am trying a new Lemon Cream Chicken recipe that I will share soon!  In the meantime,  you could make this Lemon Cream Chicken or a lighter Lemon Grilled Chicken here!  Both are VERY good!!!

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side. Thank you Mom! You instilled in me a respect for work as well as a joy in creating delicious things. I love you! xoxo
