Crunch Wrap Sandwich

Hello sweet friends!

You know how I mentioned that my oldest son is getting married on May 24th?  Well, I have been trying to be very healthy and exercise more in an effort to look my best for the wedding.  You know those wedding pictures are up on walls for years!  That has been a very motivating thought for me.  I really hate dieting, so I like to think about it as being more health conscious.  I did join Weight Watchers online and have really liked the program.  It is a fun challenge to stay within my daily numbers but not have to count calories.  It is a pretty cool program and I have lost 9 pounds so far (and no this is not sponsored by WW)!  I have found a few tips and tricks that have made losing weight pretty painless and easy. One thing that has saved my lunches is this incredible crunch wrap sandwich .  They are the BEST and only about 5 points on WW (the way I make them–this will depend on the fillings you choose)!  They check all the boxes for me: low calorie and carbs, super tasty and even easy to make! These low calorie/ low carb wraps are so delicious and so versatile that I really look forward to having lunch everyday.  The sky is the limit with fillings and I have yet to make one that I didn’t enjoy!

I get these Joseph Lavash wraps at Walmart. I think they taste good, but really they are just a way to get all the flavorful fun stuff wrapped up into a sandwich.  They are not the star of the show–the filling is!

I normally cut off about a 1/3 of it to make it more of a square.

I like to add a slice of turkey, then lots of veggies ( tomatoes, red onion, cucumber, shredded carrot, green olives, and always spinach or arugula) and a super flavorful condiment –my favorites lately are Great Value Southwest Hot Mustard or Publix Artichoke Spinach dip.  I have also added a little bit of cheese or a Laughing Cow low fat soft cheese wedge. You could get creative with whatever you like.

Then spray it with some oil spray, sprinkle with salt and toast all sides in a hot pan. crunch wrap sandwich

Perfect!  Put on a plate, slice in half and enjoy!  YUM!!

My new favorite lunch–low in carbs and calories all while being delicious and filling!  Win-win!!

Ingredients

  • Joseph’s Lavash Bread
  • Turkey/ ham/ grilled chicken/ salmon/ shredded pork/scrambled eggs/ meatballs
  • sliced onion
  • sliced green olives
  • tomatoes
  • Cheese (if desired)
  • argula/ spinach/ watercress/ coleslaw
  • guacamole/ hummus/laughing cow cheese wedge/ spinach artichoke dip/ Southwest Spicy Mustard

Instructions

  1. Lay out wrap (cut off 1/3 if you want to make it smaller) on a flat surface and sprinkle or spread cheese if you are using it (this is where I put a little Laughing Cow or Artichoke Dip)
  2. Layer deli meat, grilled chicken, salmon, shredded pork, scrambled eggs or meatballs (be creative ),
  3. Next add any veggies you want–I like lots of red onion (sliced thin), sliced tomato, shredded carrots, green olives, everything but the bagel seasoning
  4. Finish with a squirt of your favorite sauce–I am really liking the Great Value Southwest Hot Mustard.
  5. Now carefully fold the edges into the middle to for a pouch –see picture above.
  6. Once you have your pouch folded nicely, spray lightly with nonstick cooking spray ( Iike olive oil spray) and place the fold side down in a hot frying pan.
  7. Toast on all sides and transfer to a plate. Slice in half and enjoy! YUM!!
  8. *Depending on the contents you choose you could do a Thai peanut sauce, BBQ, dip in marinara sauce. Really the sky is the limit!!
