Cilantro Rice

Happy Tuesday sweet friends!

Have you heard of ‘Taco Tuesday’?  Are you on board with that?  We are are are at my house.  We love tacos so having them once a week, is fine by us!  Taco night…yes please!  We don’t always have traditional tacos though. Sometimes I just make all the fixings and we put it all in a bowl.  Taco meat, beans, rice, pico de Gallo, guacamole, shredded cheese, salsa, olives, tortilla chips and sometimes even queso (my boys favorite)!  I like to start with rice on the bottom and this Cilantro Lime Rice is the perfect backdrop for our tacos in a bowl. This rice is a family favorite for good reason.  It has a great flavor and is so easy to make! We like this as a side when I make our favorite Honey Lime Enchiladas, Creamy Fiesta Chicken Bake , Baked Chicken Tacos or any Mexican food really!  I think this Cilantro Lime Rice will be a staple at your house too.

I love to have the ingredients to simple, easy recipes on hand, especially in the month of December.  Life gets so busy this time of year but I want to enjoy good meals with my family still. Planning ahead is key for me. Did you know I have free printable weekly menu planner/ grocery list here ?

Ingredients

Scale
  • 2 cups water
  • 1 tablespoon butter
  • 1 cup long-grain white rice
  • 1 teaspoon lime zest
  • 2 tablespoons fresh lime juice
  • 1/2 cup chopped cilantro

Instructions

  1. Bring the water to a boil; stir the butter and rice into the water.
  2. Cover, reduce heat to low, and simmer until the rice is tender, about 20 minutes.
  3. Stir the lime zest, lime juice, and cilantro into the cooked rice just before serving.

Tribute to my sweet Mom
