One Pot Creamy Garlic Pasta

Happy Wednesday everyone!  How is your week going?  We are plugging away (mostly at home) during this strange pandemic/quarantine time. I will say, family dinners are really nice right now. We are all home and can enjoy a relaxed meal together every night.  That is one thing I have really enjoyed during all this craziness.  One of our favorite meals lately has been this One Pot Creamy Garlic Pasta.  I love that it is incredibly easy to make and seriously so delicious! The simplicity of the pasta cooking and making it’s own sauce in the process is so cool.  We prefer to use cream in this recipe (makes it taste like Alfredo sauce–which my boys LOVE), but feel free to use milk ( it will still taste great, just not as creamy).  This recipe makes 4 servings, so I double it to feed my family.

This turns out so great every time and I only have one dish to wash!  YES!  I like it with kale or spinach stirred in at the end until it is wilted, but you could leave it out.  You could also add some grilled chicken or cooked shrimp at the end.  I think you will love this recipe as much as we do!

Ingredients

Scale
  • 2 Tablespoons butter
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup cream or milk
  • 8 oz fettuccine
  • salt, to taste
  • pepper, to taste
  • 1/4 cup grated parmesan cheese
  • 1 cup fresh kale or spinach, chopped

Instructions

  1. Heat unsalted butter in a large skillet over medium high heat. Add garlic and cook, stirring frequently, until fragrant, about 1-2 minutes.
  2. Add in the chicken broth, cream or milk, and fettuccine. Season with salt and pepper.
  3. Bring the pot to a boil, then reduce heat and simmer, stirring occasionally, until pasta is cooked through, about 18-20 minutes.
  4. Stir in Parmesan and kale (or spinach). If the mixture is too thick, add more milk as needed until desired consistency is reached.
  5. Serve immediately.
  6. Enjoy!
