Pizza Rolls

Friday night is pizza night at our house and no matter what, my family expects pizza for dinner. Sometimes we order from our favorite local pizza place (Lupis, Rossellis or even a hot and ready Little Caesars) but recently with the pandemic and stay at home orders, I have been making pizza every Friday!  And I do not always make traditional pies.  I like to change things up with recipes like these pizza rolls. Thankfully my boys love all forms of pizza!  Even Hot Pizza Dip (have you tried that yet–yummm)!

Here is what I did:

I rolled out the pizza dough like I do for cinnamon rolls and layered it with lots of cheese, and pepperoni.  You could of course, use any of your favorite pizza toppings.  My boys are pizza purists ( a nice way of saying boring-haha!) and always just want pepperoni.

Then I rolled the dough up and cut the long roll with a serrated knife into about 16 rolls.  I set them on a parchment lined baking sheet and brushed them with garlic butter before popping them into a preheated oven.

I used a bottle of Trader Joe’s pizza sauce for dip, but you could do this 5 Minute Marinara recipe or a bottle of your favorite pasta sauce. And if you are my family, you will need some ranch on the side too!

My boys prefer more topping and less bread so trust me and add a little more topping than you think you need. These were a big hit at my house!  I hope you like them too:)

Ingredients

  • 14–16 ounces Pizza Dough (see recipe below or pick some up from the store)
  • 1 cup sliced pepperoni chopped
  • 2 cups shredded mozzarella cheese
  • 2 tablespoons butter, melted
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon Italian seasonings
  • grated Parmesan cheese
  • marinara sauce and ranch for dipping

Pizza Dough

  • 1 cup warm water
  • 2 1/4 teaspoons active dry yeast (1 packet )
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 3 tablespoons olive oil
  • 3 cups bread flour (give or take to get a nice soft workable texture) *all purpose flour is fine too

Instructions

  1. Preheat oven to 400 degrees. Roll pizza dough into a rectangle about 10 X 14 inches. Sprinkle dough with pepperoni and mozzarella.
  2. Starting with the long end, roll up dough tightly. Slice into 1-inch pieces. Place rolls on lightly greased or parchment baking sheets.
  3. For the glaze: In a small bowl combine the melted butter, garlic powder, and Italian seasonings. Brush over rolls.
  4. Bake for 10 minutes or until browned on top. Sprinkle with Parmesan cheese if desired. Serve with warm marinara sauce for dipping.

Pizza Dough Directions:

  1. Measure warm water (between 100°-110°F or about the temperature for a baby bottle) in a measuring cup, then add the yeast and sugar. Stir gently, then let sit until it’s active and foamy. This will happen within 5 minutes. If it doesn’t, your water may have been too hot or cold or your yeast may be old.
  2. Stand mixer preparation: add salt, oil, and 2 cups of flour to the mixing bowl. Attach the dough hook to the stand mixer. Stir the flour mixture gently while adding the proofed yeast mixture. Run the mixer on low speed until the mixture is combined and wet and then add the third cup of flour. The mixture should come together into a ball that is soft a little bit sticky.
  3. By hand preparation: stir salt, oil, and 2 cups flour in a large mixing bowl, stirring in the yeast mixture as you go, using a wooden spoon. Add the third cup of flour and then stir until you can’t anymore. Remove the spoon and then use your hands to work the dough into a ball that is slightly sticky.
  4. Spray a large bowl with nonstick cooking spray, add your pizza dough ball, then spray the top lightly with cooking spray and cover with plastic wrap. Place in a warm area of the kitchen and let rise until doubled in size, about 1-2 hours.
