Simple Cinnamon Granola

This simple cinnamon granola is a staple at my house.  We love it on yogurt, ice cream, in a cereal bowl with milk and by the handful as a snack. This summer we are on a granola kick and my boys can not go a day without it!  I don’t mind since it is so easy to make with no chopping or unusual ingredients and stores well.   This simple recipe full of wholesome oats, cinnamon, maple syrup and sweet coconut makes a perfectly crunchy and delicious granola! And great news for my family (with my son having Celiac disease) you can easily make this gluten free by using certified gluten free oats, like these.

Ingredients

Scale
  • 4 cups rolled oats (use gluten free oats to make this recipe gluten free)
  • 1 cup coconut (optional)
  • 2 teaspoons cinnamon
  • 1/3 cup brown sugar
  • 1/2 cup maple syrup
  • 1/3 cup coconut oil
  • 1 1/2 teaspoon vanilla
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 325
  2. Combine all ingredients together pour onto a cookie sheet.
  3. Bake for 30-40 minutes or until golden brown.
  4. Cool completely before storing in a closed container.

    I will be making this! Is it best to use old fashioned oats or quick oats? Thank you!
