It is the perfect thing to make when you have pulled chicken out of the freezer and don’t know what to do with it. Does that ever happen to you, too? This recipe will save dinner in no time. It is simple dish that uses pantry staples and always turns out wonderfully. Pure comfort food.

Recipe Notes:

Seasonings: You can substitute different seasonings on the chicken if you want! Lemon Pepper Seasoning, Italian Herb Mix – just use what you have.

Rice: Any white rice works great here except minute rice. Long grain white rice will be the best (most fluffy). Short and medium grain will work fine, but will result in a stickier rice. Basmati and jasmine are wonderful too  and will have the same cook time. If you want to use brown rice, add an extra 1/2 cup hot water. Bake covered for 45 minutes then bake uncovered 15 – 20 minutes until rice is tender.

Ingredients

  • 3 tbsp butter
  • 1 tbsp olive oil
  • 1 small yellow onion, diced
  • 2–3 chicken breasts, diced
  • 1 tsp paprika powder
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 3/4 tsp salt
  • Black pepper
  • 3 cloves garlic, minced
  • 1 1/4 cups long grain white rice
  • 3 cups chicken broth
  • grated Parmesan, for garnish
  • chopped fresh parsley, for garnish

Instructions

  1. Preheat oven to 375˚F.
  2. Combine butter and olive oil in a large oven-safe skillet and set over medium high heat; Melt butter.
  3. Add onions to skillet and cook for 2 minutes.
  4. Season chicken with paprika, thyme, garlic powder, paprika, onion powder, salt and pepper.
  5. Add chicken to the skillet; cook for 5 minutes, or until golden brown on all sides.
  6. Stir in garlic.
  7. Add rice and cook for 1 minute.
  8. Add chicken broth; increase heat to high and bring to a boil.
  9. Turn off heat. Cover skillet with a lid and bake in the oven for 30 minutes.
  10. Remove cover and continue to bake for 3 more minutes, or until liquid is absorbed.
  11. Remove from oven and let stand 5 minutes.
  12. Garnish with Parmesan cheese and parsley; serve.

    This is very yummy! I used brown rice as that is what I had on hand, and it worked perfectly! Thank you!
