Hello sweet friends,

How are you?  I know you are probably shocked to finally see a new post from me—it has been a hot minute (so sorry). Thank you for sticking with me!  I think I really do have the BEST and most loyal readers.  I appreciate your support and “blog” friendship. I actually have made some wonderful real life friends through this website–and I love them dearly. Anyway,  I have have been a bit absent recently but I do have a good reason…a wedding!!  My son TJ got married!  I now have a new beautiful daughter-in-law (Whitney)  and I could not be happier about it!

Introducing the newest Mr & Mrs Christensen:

Aren’t they cute together?  Its was such a wonderful wedding and now I am preparing for an Open House here in Tennessee. It seems fitting to ” celebrate” with this Old Fashioned Buttermilk Donut Cake recipe! I wish I could share a slice with you and not just the recipe.

Oh my, this cake is one of my family’s FAVORITES!!  When I make this cake, I have very excited boys and there is usually nothing left within hours! I think their are a couple of secrets to the this cakes success. First, is the addition of oat flour that makes it the perfect moist and tender texture.   Then the perfect amount of nutmeg and lots of vanilla glaze.  It really does taste just like an old fashioned butter milk donut (one of my favorite treats).Old Fashioned Buttermilk Donut Cake

Be generous with the glaze, and let it really sink into all the cracks and crevices of the cake. Don’t hold back!  You can go crazy with the glaze and use it all–you won’t regret it! Last time I made this cake, I gave about 1/3 of it to our neighbors on a plate and my boys were pretty bummed that I shared!  Ha!!

I think this would be the perfect dessert for Fall.  You will definitely want to save this one!

Description

Incredible cake that tastes just like a freshly glazed Old Fashioned Buttermilk Donut! Your family and friends will love it!


Ingredients

Scale
  • 2 cups all purpose flour
  • 1 and 1/2 cups oat flour
  • 1 and 1/2 cups sugar
  • 1 tsp freshly grated nutmeg
  • 1 and 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • wet ingredients
  • 1 3/4 cups buttermilk
  • 3/4 cup coconut oil (can use vegetable oil or light olive oil)
  • 3 large eggs, at room temperature
  • 2 tsp vanilla extract

glaze

  • 2 cups powdered sugar
  • about 5 Tbsp hot water
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 350F
  2. Prepare a bundt pan by carefully buttering the entire surface, and then dusting with flour. Shake off excess flour.
  3. Whisk the dry ingredients together in a large mixing bowl.
  4. Whisk the wet ingredients together in a another bowl.
  5. Add the wet ingredients to the dry and whisk until just combined, don’t over mix.
  6. Pour the batter into the prepared pan and bake for 45-50 minutes, until a toothpick inserted near the center comes out without wet batter clinging to it. Set the pan on a cooling rack for 15 minutes.
  7. I take a knife and go around the edge of the cake to loosen from the pan and then invert the cake. Once it is safely out of the pan, gently flip it back over so that the rough edge is facing up.

To make the glaze:

  1. Whisk the powdered sugar, and vanilla with just enough hot water to make a smooth pourable glaze. When you lift the spoon and let the glaze drip down the ‘squiggles’ should disappear instantly. I used almost but not quite all of the water.
  2. When the cake is cool, brush the glaze liberally all over, concentrating on those gorgeous cracks along the top. Work quickly, and go over the cake more than once if you need to. The glaze will harden as it sits.
