The BEST creamy bean dip

We are headed to Utah to visit family for Christmas and attend our sweet Grandson’s baby blessing.  I know there will be plenty of family time and we always need a good snack while we play games, watch a bowl game or a movie. I will definitely be making this dip—The BEST creamy bean dip ever. I am not kidding. It is so easy to make and so darn tasty!  I think the key is the cream cheese. This is hands down my favorite bean dip.

What you need for the BEST Creamy Bean Dip

  • Cream Cheese
  • Refried Beans
  • Rotel Tomatoes
  • Taco Seasoning
  • Grated Cheese

I love to dip chips in this –the BEST creamy bean dip, but I also love the leftovers in a burrito!  Add a little grilled chicken, taco meat or sautéed veggies and you have a fabulous meal!  Quick, uncomplicated and always delicious! Make it!  You will not regret it!

Ingredients

Scale
  • 1, 8 oz block of cream cheese
  • 1 can refried beans
  • 1 can of Rotel tomatoes with green chilies (or one cup of salsa)
  • 1 – 2 tsps taco seasoning
  • 1 cup (more if you want) of grated cheese
  • *Optional: Diced jalapeños (fresh or jarred), if you like it hot!!

Instructions

  1. Add cream cheese and refried beans to a small pot. Heat over medium heat until combined.
  2. Add the remaining ingredients and stir over medium heat until melted.
  3. Remove from heat. I like to put it in a dish and sprinkle with cheese, and broil for minute to melt. Then sprinkle on some cilantro, diced avocado and chopped tomatoes, if I have it on hand. YUM!

Made this for the Super Bowl, Yum! Added some sausage, kind of like your rotelle dip. Anyway, it was super yummy with the avocados on top as well.

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side. Thank you Mom! You instilled in me a respect for work as well as a joy in creating delicious things. I love you! xoxo
