Grilled Garlic Ranch Dressing Chicken

This Grilled Garlic Ranch Dressing Chicken is a great addition to a fresh summer dinner. We love to eat a lot of fresh fruit and vegetables in the summer but my boys always want a meat too. I happened to have a big jug of ranch dressing left over from a church activity and stumbled upon this fabulous marinade to use with it. It was SUPER easy to make and everyone loved it. Not pictured is Italian dressing because I used some homemade dressing, but you don’t have to. Any Italian/ lemon/Greek dressing will work!

Tips for Success

*Place chicken in a zip loc bag or between two sheets of wax paper and pound the chicken breasts with a meat mallet. Make sure all the chicken breasts are a similar size and not too thick. This will insure the final product is tender and flavorful!
*Marinade for at least 4 hours or overnight!
*This marinade can be prepared, add the chicken and then throw in the freezer. It will end up marinating the chicken while it defrosts!

*Fresh summer fruit like watermelon, peaches, or pineapple
*Creamy Parmesan Rice
*Quick and Easy Breadsticks
*Spinach Salad with Strawberries, pine nuts and Feta
*Lemon Orzo Salad

Description

Super and easy and delicious grilled chicken!


Ingredients

Scale

1 cup Ranch Dressing

1 cup Italian Dressing (or your favorite vinaigrette)

3–4 boneless skinless chicken breasts

1–2 cloves garlic minced (or use 1–2 tsp bottled garlic)


Instructions

  1. Place chicken breasts in a heavy freezer bag and pound using a meat mallet to create even thickness.
  2. Add ranch dressing and Italian dressing to the bag, along with garlic and pepper.
  3. Massage bag for a couple of minutes to mix ingredients and fully saturate chicken breasts.
  4. Allow the bag of chicken to marinate in the fridge for at least 4 hours or overnight.
  5. Preheat grill to medium. Once grill is hot, place chicken on grill and leave for 6-7 minutes.
  6. Turn chicken over and continue to cook for another 5-6 minutes or until internal temperature reaches 160.
  7. Remove from grill and allow to sit for at least 5 minutes while temp continues to 165. ENJOY!

    Great question! I updated the recipe to include the amount of chicken that I normally use—3-4 boneless, skinless breasts.
