Menu Plan #5

Monday:

Creamy Turmeric Soup with Split Peas and Lentils –this is such a unique soup that is seriously packed with nutrients and so much flavor. I love to have the leftover soup for lunch all week. It is fantastic with the creamy cashew “cream” on top.

Tuesday:

Instant Pot Cafe Rio Chicken

Cafe Rio Chicken Tacos– You can make this flavorful chicken taco meat in the crockpot or instant pot. I love to put it in the crockpot in the morning and have a delicious dinner ready in the evening. You can use it for tacos or burritos, taco salad, or nachos. My whole family loves it. Bonus–it freezes well if you want to double it for another dinner. I love to cook once and eat twice!

Wednesday:

Thai Curry Turkey Meatballs are a healthy and fun dish served over rice or wrapped up in a piece of naan bread (try this recipe or pick some up at the store). Once again you can double the meatballs and freeze for next time. Serve with some fresh fruit and simple steamed vegetables like broccoli or cauliflower.

Thursday:

Creamy Sun Dried Tomato Chicken Pasta aka Pasta MIlano My husbands favorite pasta dish at Macaroni Grill is Pasta Milano and so I came up with a way to make it at home. He loves this recipe and it is easy to make!

Friday:

Pizza night–My husband offers to “cook” this night and that means ordering pizza locally (haha) but there are lots of fun pizza recipes here if you want to make your own,
including this Fun Pizza Twists!

Saturday:

Date Night–out! Leftovers for whoever is home.

Sunday:

Monterey Chicken is a favorite chicken dish in our home. You marinate the chicken before grilling or baking it, then top with with an incredible topping including BBQ sauce, tomatoes, cheese and crispy bacon! My boys request this one regularly form special occasions like birthdays. I like to serve it with this amazing Creamy Parmesan Rice. I am not kidding –just adding this rice as a side dish will elevate any meal to restaurant quality.

Breakfast Ideas:

My family LOVES scones and I have lots of recipes for them (found here), but this is my go to Best Ever Classic Scone with Endless Variations. Here I made them Cinnamon swirled with a Maple Glaze. Perfect breakfast or snack during the week. They freeze well.

Snack & Dessert for the week:

Use this traditional method for Perfect Hard Boiled Eggs, or this one using your Instant Pot, to prep some eggs for snacks and quick meals for the week. We love deviled eggs and egg salad sandwich (like this one with avocado instead of mayo). Another great recipe that uses hard boiled eggs is this Cobb Salad–a great meal in itself!

No Bake Halloween Cookies

No Bake Halloween Ghost and Witch Hat Cookies and Witches Broom Cookies are easy to make and will delight your family. Bonus that you don’t even need to turn on your oven. Other fun Halloween treats are found here.

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side. Thank you Mom! You instilled in me a respect for work as well as a joy in creating delicious things. I love you! xoxo
