Menu Plan #10

January 8-14, 2024

Monday:

Winter Vegetable Soup is the perfect soup to get back on track after all the rich holiday foods and treats! Just eating this soup full of nutrient dense ingredients feels good and makes me happy. I will eat the leftovers for lunch this week too. YUM! I like to serve this soup with some yummy bread, like these easy Garlic Cheese Biscuits (not the most heathy but it will keep my boys happy). They don’t get as excited about vegetable soup as I do–haha!

Tuesday:

Instant Pot Cafe Rio Chicken

Cafe Rio Chicken made in the crockpot or Instant Pot (I give directions for both). This is such a delicious and easy dinner for busy weeknights. We like this as tacos or bowls with cilantro lime rice.  A filling and fast dinner for your family. Serve with some refried beans and fresh fruit like berries, sliced oranges or apples.

Wednesday:

Creamy Pasta with Sausage

This Creamy Pasta with Sausage is a recipe that was inspired by a pasta dish I had at Eatly in New York City. It is so good. My family loves this dish and so do I! I plan to serve this with a green salad and maybe some of these easy breadsticks on the side (if I find the time that day).

Thursday:

Rosemary Honey Mustard Chicken is a family favorite at our house. It is super easy to make and seriously tastes amazing. It is one of those recipes that you can serve to company because it is so delicious. No one would guess how simple it is to make. I like to serve this with some rice and fresh vegetables like roasted broccoli with lemon and pine nuts Yum!!

Friday:

Pizza night–this week I am going to make my family these fun Quick and Easy Pizzas or have my husband pick up pizza from Marcos (he loves their pizza).

Saturday:

Date Night–out! Leftovers for whoever is home.

Sunday:

We are in the mood for a classic Pot Roast this week. I will serve it with these wonderful mashed potatoes and…

Yorkshire Pudding. We love this with pot roast and gravy —Sooo good!! I grew up on this and love it. I will of course also add something green. Probably a green salad or heat up some canned green beans with lots of lemon pepper.

Breakfast Ideas:

Instant Pot Egg Bites. These little guys are seriously delicious and taste great reheated. I will make a batch this weekend and keep them in a container in the fridge. They are perfect for busy weekday mornings or added to some veggies for a quick lunch. Protein packed and with endless variations to personalize them to your tastes!

Snack & Dessert for the week:

These Appplesauce Oatmeal Muffins are a huge hit at my house. I think they are my boys favorite muffin I make. They are super tender and full of healthy ingredients. These are great for breakfast on the run, to pack in a lunch box or a mid afternoon snack. They also freeze really well.

Protein Poppers are great to have in the freezer for when that sweet tooth hits! They are nutrient dense and very satisfying.

    Thanks for the delicious recipes. Could you please post the link to the pasta dish on Wednesday from Eatly? There is a link to the Eatly restaurant but I’m not finding the recipe like. Thank you!

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side. Thank you Mom! You instilled in me a respect for work as well as a joy in creating delicious things. I love you! xoxo
