Best Homemade Chewy Brownies

How do you like your brownies? More cake like?? Or do you like more chewy fudge like brownies similar to the kind from a box mix? I used to always make my One Bowl Brownie recipe but I guess my tastes changed. While that recipe is really good, it definitely makes a more cake like brownie and now I prefer a more fudge like brownie. My favorite store bought brownie mix is the Ghirardelli Triple Chocolate Brownie mix from Costco. Have you tried that one? Well I was determined to find a recipe that replicates those brownies and I think I have it. I can honestly say… that I like these brownies even better! They are so good!

They come together fast, in less than an hour and you only need one bowl! Maybe not quite as fast as dumping a mix in the bowl but pretty darn close and they are better with ingredients you control. I like to use dutch process cocoa and a combination of good quality semi sweet and milk chocolate chips.

They come out of the oven with that classic crackly top, crispy sides and a fudgy center… perfection!! I like to line the pan with parchment paper. That way you can lift it out of the pan, and cut easily, making clean up a breeze too! I photographed these using my stoneware pan, because it looks pretty, but zi do think that my light colored metal pan creates the best brownies. Metal is just better for baked goods especially with a short cook time like these brownies. I recommend a pan like this. The brownies below were made with regular cocoa. See the lighter color compared with the next picture.

This batch was made with Dutch Cocoa. It creates a darker brownie. Honestly both are really good. So if you don’t have Dutch (darker) Cocoa, no worries! Your brownies will be lighter in color and not quite as rich but still fantastic!!

Description

Best Homemade Chewy Brownies are just as chewy as boxed brownies but packed with so much more rich chocolate flavor.  You will only need one bowl and have brownies in less than an hour from start to finish. 


Ingredients

Scale

5 Tablespoons Butter

1 1/4 cups Sugar (white or granulated)

2 large Eggs 

1 large Egg Yolk

1 teaspoon Vanilla Extract

1/3 cup Vegetable Oil (neutral flavored–not olive oil)

3/4 cup Cocoa Powder (Dutch process or regular)

1/2 cup all purpose Flour

1 Tablespoon Cornstarch

1/8 teaspoon Baking Soda

1/4 teaspoon Salt

3/4 cup Chocolate Chips ( semi sweet or milk or a mix)


Instructions

  1. Preheat oven to 325 F.
  2. Line an 8×8 inch pan (glass not recommended) with parchment or foil and spray with non stick cooking spray.  Light colored metal pan is the best option, if you have one.
  3. In a microwave safe bowl, add the butter and sugar.  Microwave for 1 minute, or until the butter is melted.  Whisk in the eggs, egg yolk, and vanilla.  Stir in oil and cocoa powder.
  4. With a rubber spatula, stir in flour, cornstarch, baking soda and salt, just until combined.  Stir in the chocolate chips.
  5. Spread the brownie batter evenly into the prepared pan.  Place in the oven and bake for 30 minutes, or until the brownies are set and a toothpick inserted into the center has moist crumbs attached. Do not overcook. Let cool completely to set before cutting and serving.
  6. Brownies can be stored in an airtight container at room temperature for up to 3 days. Brownies will be gooey when served warm, chewy when served at room temperature, and fudgy when served chilled.

    ohh I am so happy you love that old recipe!! I made it for years but recently switched to this one….but mostly because I wanted for fudgy brownies. You may want to stick with that other recipe! Thank you so much for your comment!! xoxoxo

    I didn’t try these yet, but I made the one bowl brownies yesterday that you mentioned in your post, and oh my they are amazing. I love how they are not that really gooey brownie that I don’t care for. They are a little cakelike but so fudgy and rich also. Loved them and that they use half butter and half oil to save a little on the sat fat. But they are a treat for sure! I’ll try this one next but we have a lot of brownies in the freezer as I froze most all of them yesterday or I would have eaten the whole pan. Thank you Melanie.
