What kind of Easter gathering are you having this year?
A lovely brunch or an evening dinner?  Or both?

I have some wonderful Easter menu ideas for you either way that will help make your celebrations special and delicious!

Some of my very favorites are the endless variations of this classic  Hashbrown Casserole (you can make it the day before too), these classic Scones, Raspberry Lemon Muffins (to die for) or any of our other muffins (just put muffin in the search bar up top).

A must make at our house are these Easter Morning Rolls (aka Resurrection Rolls)

Kids LOVE them!

And don’t forget to get all your eggs boiled and ready for dying.  Here is a method we use that works great!  **Update–now I use the Instant Pot to make perfectly boiled eggs!  It’s great because you can make TONS at once!

 We are dying eggs tonight and I will probably make one of these treats below to munch on while we work!

We love these fun little Easter Rice Krispy Nests or Chewy Chex Mix with Chocolate Eggs:

This year we are going to a friends home for Easter Dinner but last year I hosted and here is the menu I served:

Honey Baked Ham
I think they are the best for a classic ham, but they are pricey so most years I end up with a spiral cut ham from Costco instead, which taste fabulous too:)

Classic Potato Gratin

Potatoes Dauphinoise
are my all time favorite…but classic Au Gratin are always a big hit too!

Buttermilk Rolls

Buttermilk Roll shaped like little bunnies
using the method from my sister Mindy’s Bunny Bun recipe.  I made them last year like this and they were perfect for Easter!  A new tradition was born!  I already have my buttermilk roll dough in the fridge ready for Sunday.  I love that you can make the dough days ahead of time.  What a great recipe!

Strawberry, Pinenut, and Feta Salad with a zesty Lemon Dressing

Although, there are so many wonderful salads you can choose from here. 

Asparagus with Maple Mustard Glaze
Asparagus in season and just perfect for Easter 🙂  I also LOVE the ones with Balsamic Butter Sauce here.

Strawberry Shortcake with Almond Glaze—
it is the BEST, trust me!! This is a family favorite and it will probably always be on our Easter dinner menu.  We absolutely LOVED it!  My mouth is watering just thinking about it!

Chocolate Strawberry Shortcake

If you love chocolate–try this Chocolate Strawberry Shortcake.

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side.
