Description

Bright & Buttery Lemon Poppy Seed Scones are the perfect morning pick-me-up or anytime treat!


Ingredients

Scale
  • 2 cups flour
  • 1 Tb baking powder
  • 1/2 tsp salt
  • 1/3 cup sugar
  • 1 Tb poppy seed
  • zest of one lemon
  • 1/2 cup firm butter, cut into pieces
  • 3/4 cup milk or buttermilk

Glaze

  • 1/2 cup powdered sugar
  • 1 Tablespoon fresh lemon juice 

Instructions

  1. Preheat oven to 425 degrees F.
  2. Mix flour, baking powder, salt, sugar, poppy seeds, and lemon zest.
  3. Cut in butter using pastry blender or crisscrossing knifes, until mixture is the size of small peas.
  4. Using a fork, slowly pour buttermilk into flour mixture and stir gently until ball forms.
  5. Turn dough onto lightly floured surface and knead lightly 10 times.
  6. Pat or roll in 9 inch circle and place on cookie sheet lined with silpat or parchment paper.
  7. Using a pizza cutter, cut into 8 wedges and place wedges about 2 inches apart.
  8. Brush with milk or an egg wash (egg mixed with 1 TB water, milk or cream)
  9. Bake for 12-15 minutes or until golden brown.
  10. While the scones back make the glaze by mixing the lemon juice with the powdered sugar.
  11. Drizzle the glaze on the warm scones. Allow to cool and enjoy!
