Menu Plan #13
January 19-25, 2026
Monday:

Start the week with fresh, bright flavors! These shrimp tacos are sweet, smoky, and citrusy — perfect for a quick weeknight dinner. Serve with chips + salsa and a side salad.
Side ideas: Cilantro-lime rice, refried beans, or a simple chopped salad.
Tuesday:

Beef Skillet Enchiladas
Hearty and cheesy, these skillet enchiladas bake in the oven and are great with toppings like avocado and sour cream.
Side ideas: Fresh fruit or a simple green salad.
Wednesday:

This soup is just a big bowl of comfort! Whenever I have a friend in need of dinner, this is soup is the meal I like to bring over. Warm, creamy, hearty and hits the spot every time! Serve with Breakdsticks, French bread or even our favorite biscuits
Thursday:

Baked Sweet Potatoes with BBQ Chicken, cheese and a drizzle of Ranch dressing
This is such a simple dinner and we love it! I like to use rotisiere chicken with our favorite BBQ sauce. YUM!! We serve it with a crisp green salad or some roasted broccoli. Easy and so good!
Friday:
Pizza night–this week I am going to make my family these fun Quick and Easy Pizzas or have my husband pick up pizza from Marcos (he loves their pizza).
Saturday:
Date Night–out! Leftovers for whoever is home.
Sunday:

I love this for Sundays. I can make it on Saturday and put it in the fridge until I pop it in the oven after church on Sunday. Pair this with a nice caesar salad, sauted zuchinni and easy Rosemary Bread. Delish!
Breakfast Ideas:

Lemon Poppyseed Scones are so delicious and freeze beautifully. They make a great grab and go breakfast paired with a protien shake, or some egg bites.
Snack & Dessert for the week:

Cranberry Walnut Oat Bread makes the BEST turkey sandwiches! I love it toasted with an egg for breakfast too!

Sprinkles Chocolate Chip Cookies add some bright fun to the dreary winter days! These are the perfect treat to gift to anyone with a birthday this week. So fun and so delicious!
