Parmesan Garlic Roasted Broccoli with Lemon

If you think broccoli is boring, this recipe is about to change your mind. This Parmesan Garlic Roasted Broccoli is crispy on the edges, tender in the middle, packed with garlicky flavor, and finished with salty Parmesan and a bright squeeze of lemon. It’s one of those simple side dishes that somehow steals the spotlight from the main course.

Roasting broccoli is truly the best way to enjoy it. The high heat brings out a slightly nutty, sweet flavor and gives the edges those irresistible crispy bits that everyone fights over. Add garlic, good olive oil, and Parmesan, and you’ve got a side dish that feels a little fancy but takes almost no effort at all.

This is one of my go-to vegetables for busy weeknights because it goes with just about everything—chicken, steak, salmon, pasta, or even tucked into a grain bowl. And the best part? It’s made with just a handful of simple ingredients you probably already have in your kitchen. It is helping me with my news years resolution to eat more vegetables!

Why You’ll Love This Recipe

  • Quick and easy – Ready in about 20 minutes from start to finish
  • Crispy and flavorful – Roasting + Parmesan = magic
  • Versatile – Perfect for weeknight dinners or holiday meals
  • Healthy but crave-worthy – A veggie dish everyone actually wants to eat

Tips for the Best Roasted Broccoli

  • Don’t overcrowd the pan. Give the broccoli space so it roasts instead of steams. Use two pans if needed.
  • Cut evenly. Try to keep the florets similar in size so they cook evenly.
  • Serve immediately. This is when the broccoli is at its crispiest and the Parmesan melts just slightly.

Make It Your Own

  • Add a pinch of red pepper flakes for a little heat.
  • Toss in some toasted pine nuts or slivered almonds for crunch.
  • Swap lemon for a splash of balsamic glaze for a different flavor profile.

This Parmesan Garlic Roasted Broccoli is proof that simple ingredients, cooked the right way, can be absolutely delicious. It’s the kind of side dish that turns veggie skeptics into veggie lovers—and once you try it, you’ll find yourself making it again and again.

Description

This Parmesan Garlic Roasted Broccoli is crispy on the edges, tender in the middle, loaded with garlicky flavor, and finished with salty Parmesan and a bright squeeze of lemon. It’s simple, fast, and somehow always disappears first at dinner.

Ingredients

  • 1 head broccoli, washed and cut into bite-sized pieces

  • 2 cloves garlic, minced

  • 4 tablespoons extra-virgin olive oil, divided

  • 1/2 teaspoon kosher salt

  • 1/2 teaspoon coarse ground black pepper

  • 1/4 cup shaved Parmesan cheese

  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 425°F and line a large baking sheet with parchment paper or foil for easy cleanup.
  2. Prep the broccoli. Place the broccoli florets on the baking sheet. Drizzle with 3 tablespoons of the olive oil, then sprinkle with minced garlic, salt, and pepper. Toss everything together until the broccoli is well coated and spread it out into an even layer.

  3. Roast. Roast in the preheated oven for 15–20 minutes, stirring once halfway through, until the broccoli is tender and nicely browned with crispy edges.

  4. Finish with flavor. Remove the broccoli from the oven and immediately drizzle with the remaining 1 tablespoon of olive oil and the lemon juice. Toss gently.

  5. Add the Parmesan. Sprinkle the shaved Parmesan over the hot broccoli and serve right away.

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side. Thank you Mom! You instilled in me a respect for work as well as a joy in creating delicious things. I love you! xoxo
