Description

This Parmesan Garlic Roasted Broccoli is crispy on the edges, tender in the middle, loaded with garlicky flavor, and finished with salty Parmesan and a bright squeeze of lemon. It’s simple, fast, and somehow always disappears first at dinner.


Ingredients

  • 1 head broccoli, washed and cut into bite-sized pieces

  • 2 cloves garlic, minced

  • 4 tablespoons extra-virgin olive oil, divided

  • 1/2 teaspoon kosher salt

  • 1/2 teaspoon coarse ground black pepper

  • 1/4 cup shaved Parmesan cheese

  • 1 tablespoon lemon juice


Instructions

  1. Preheat your oven to 425°F and line a large baking sheet with parchment paper or foil for easy cleanup.
  2. Prep the broccoli. Place the broccoli florets on the baking sheet. Drizzle with 3 tablespoons of the olive oil, then sprinkle with minced garlic, salt, and pepper. Toss everything together until the broccoli is well coated and spread it out into an even layer.

  3. Roast. Roast in the preheated oven for 15–20 minutes, stirring once halfway through, until the broccoli is tender and nicely browned with crispy edges.

  4. Finish with flavor. Remove the broccoli from the oven and immediately drizzle with the remaining 1 tablespoon of olive oil and the lemon juice. Toss gently.

  5. Add the Parmesan. Sprinkle the shaved Parmesan over the hot broccoli and serve right away.
