Instant Pot Broccoli Soup

Happy Saturday!

I meant to post this wonderful Instant Pot Broccoli Cheese Soup like Panera Bread sooner but I have been so busy this week, with a trip to the LDS temple in Atlanta, a fun visit from a dear friend from Utah and getting ready to leave for a cruise ( later this afternoon, actually)!  As you can imagine it has been a great week, but what a whirlwind!  My husband and I are joining my parents and siblings and their spouses for a week long cruise in the Western Caribbean.  It will be wonderful vacation to take together, but getting everything at home in order and our boys all taken care of for the week has been a lot of work!  Phew!  I am exhausted!  Today we have our son Bridger’s basketball tournament to cheer at and then we will hit the road to New Orleans. We have had unusually warm weather here in Tennessee (yesterday it was sunny in the low 80s!So weird for February!), but I see that my family and friends in Utah are still in the thick of winter and being dumped on with snow!  The pictures I see on Instagram look so pretty!  My son who is attending Utah State University and bought a ski pass this winter couldn’t be happier about it!  This snow came just in time for lots of Spring Break skiing! So this delicious soup recipe is especially for you out west who are getting more than your fair share of the cold winter weather!

I have made this soup twice in the last couple of weeks and we still aren’t sick of it!  It makes the perfect weeknight dinner to warm you up on a cold night and with the instant pot, it is SUPER fast!  I chopped my broccoli pretty small and I used my immersion blender at the very end to puree about half of it, creating a thicker soup. You could also do this by putting about half of it into the blender and for a minute and then stirring it back into your pot.   This step is not necessary and could be skipped, it is simply a matter of personal preference.

Next time I make it, I am going to try to use frozen broccoli  and increase the time by a minute.  I will let you know how that goes OR if any of you have made this with frozen broccoli please let me know how it goes in the comments!

Description

Cheesy and delicious broccoli soup that comes together super quick and easy in your Instant Pot


Ingredients

Scale
  • 2 tbsp butter
  • 1 medium onion finely diced
  • 1 large bunch of broccoli, chopped (5–6 cups)
  • 1 cup shredded carrots
  • 2 cloves garlic minced
  • 4 cups chicken stock or broth
  • 1/2 tsp paprika
  • 1 tsp dijon mustard (optional–I like it)
  • 2 cups sharp cheddar cheese , shredded ( or half Monterey Jack)
  • 1 cup heavy cream (or sub half and half, or milk instead–it wont be as thick or creamy though)
  • salt and pepper to taste

Instructions

  1. With the Instant pot lid off heat butter on the ‘sauce’ function until melted and sizzling
  2. Place onion in cooker and sauce until translucent , 4-5 minutes. Add garlic cloves the last minute.
  3. Add broccoli florets, carrots, chicken stock or broth , paprika and dijon mustard (if using). Securely lock the instant pots lid and set for 4 minutes on HIGH.
  4. Preform a quick release to release the cooker’s pressure.
  5. Stir in heavy cream and cheddar cheese in then add salt toad pepper to taste before serving.
  6. *I like to use my immersion blender for a minute or two to partially puree to thicken the soup up a bit.

    I just made this tonight after rolling back in to Utah and all it’s snow from sunny California so I didn’t have much in the way of groceries. This recipe came up on my Facebook feed and somehow I had everything I needed to make it. It is so tasty and was really simple to with that in my instant pot. I actually used the frozen broccoli florets (as well as frozen chopped onions from Kroger) and it turned out great!
