Cheddar and Chive Savory Scones

Savory Scones

Remember when I posted this Classic Scone recipe and talked about the savory scone variations?  Well, this is what I was talking about. I meant to share the recipe sooner , but every time I made them, we would gobble them up before I could remember to snap a picture.  So, I am sorry that I took so long to share this recipe with you…but it is worth the wait!  These scones are soooo delicious!  They are the perfect accompaniment to a warm bowl of soup or a hearty salad.  I like to prep this recipe in the morning and then it comes together super quick at dinner time.  I mix the dry ingredients together in a bowl with a lid.  Then I chop the cheese and chives and store them in the fridge. About 30 minutes to an hour before dinner I gently stir the cheese and chives in to the flour mixture, add the buttermilk, and finish the recipe.  So quick and easy for the dinner time rush and trust me, your family will come running when you pull these savory scones out of the oven.  **If  you are gluten free, use this GF scone recipe here, simply cut the sugar to 1 Tablespoon and add the cheese and chives listed here.

These Cheddar and Chive savory scones will be part of my St Patricks Day dinner this year.  I will serve them with some Irish ‘Bangers’ (sausage) roasted like this with some fresh vegetables.  I will also fix this wonderful Irish potato and cabbage dish called Colcannon (my favorite) and either green frosted Sugar Cookie Bars or Key Lime Pie for dessert!  Everything can be prepped in the morning before we are off for a day of soccer games!  I love dinners like that!

I think fun traditions build strong families and create sweet memories.  Some “holidays” (like Pi day or  National Donut Day) are just silly but your kids will love a reason to gather and spend time together with some yummy food!

Cheddar and Chive Savory Scones

Ingredients

Scale
  • 2 cups all purpose flour
  • 1 Tablespoon baking powder
  • 1 teaspoon salt (sometimes I use garlic salt/ cut back to 1/2 tsp salt if your cheese is salty )
  • 1/2 cup cold butter, butter into pieces
  • 2/3 cup cubed or grated sharp cheddar cheese
  • 1/4 cup chopped chives or green onions
  • 3/4 buttermilk or whipping cream
  • extra cream or egg wash (1 egg mixed with 1 TB milk) for brushing the tops

Instructions

  1. Preheat oven to 400.
  2. Stir together first three ingredients in a large bowl or food processor.
  3. Cut butter into the flour mixture using a pastry blender or by pulsing on food processor, until the mixture is crumbly and resembles small peas.
  4. Place mixture in freezer for 5 minutes.
  5. Stir in cheese and chives (or green onions) and then add 3/4 buttermilk or cream, stirring until just until dry ingredients are moistened. DO NOT OVERMIX DOUGH!
  6. Turn dough onto baking mat (or marble slab or wax paper) , gently press or pat dough into a 7 inch round (mixture will be very crumbly)
  7. Cut round into 8 wedges.
  8. Place wedges about 2 inches a part on a parchment or silicone lined baking sheet (or lightly grease first).
  9. Brush tops with whipping cream or egg wash. Bake at 375 for 15-20 minutes or until golden brown.

* To make mini scones:

  1. Divide dough in 2 and create smaller circles, then cut in 8 each.
  2. Cut bake time to 10-12 minutes (watch closely–every oven is different). Take out when golden brown
