Happy New Year friends!

How was your Holiday season, so far?  I hope you have all enjoyed time with the ones you love. We have had so much fun with my oldest son home from college and getting to Skype with our missionary on Christmas.  It has been the BEST!

One of my New Year Resolutions is to make a weekly plan for family dinner!  I am usually pretty good about it, but during December I was a slacker in that department and I am ready to get back on track!Here in Tennessee, we are experiencing some very cold temperatures (for us) and I am excited to adding more soup and stews to our menu!

Monday~ Honey Lime Chicken Enchiladas

Tuesday~ Instant Pot Beef Stew (new recipe that I will post soon) in the mean time here are a couple recipes from my sisters here.

Wednesday~Quinoa Chicken Parmesan Soup

Thursday~Thai Peanut Stir Fry–I am using this amazing Thai Peanut Sauce over some chicken and vegetables with rice. YUM!

Friday~ PIZZA night!  Lots of fun Pizza recipes here.

Saturday~ Date night–OUT:)

Sunday~ Sweet and Spicy Pork Tenderloin 

For a healthy and fun snack my whole family loves–I will be making a couple of batches of these protein poppers too!  We like to keep them in the freezer.

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side. Thank you Mom! You instilled in me a respect for work as well as a joy in creating delicious things. I love you! xoxo
