Zucchini Red Onion Flatbread
Happy Monday!  
How is your summer going? Can you believe it is already more than half way through July?!  We only have 3 weeks left, since we start back to school early here in Chattanooga. I have a fabulous summer recipe Zucchini Red Onion Flatbread to share with you today, but first so sorry I was MIA last week!  We were in Florida with my boys and some friends (there was 9 boys and 3 Moms)!  It was a lot of fun–but I accidently left a bag I had packed with my MacBook and books for the beach at home!  UGH!  So I was not able to post any recipes last week!  This week may be a little tricky too, since my oldest son is visiting and we have lots of fun planned the couple of days that he is home.  Summer is the best!  
Well, back to this awesome recipe—Our garden is doing so well this year (yeah!!) and we have lots of zucchini.  One of my favorite things to do with zucchini is make this amazing Zucchini Red Onion Flatbread. Have you tried it?  I shared this recipe 8 years ago, but decided it needed to come out of the archives and be spotlighted because it is SO good!  
I have made this delicious Zucchini Red Onion Flatbread the last 3 years to share at my annual swim party for our church group and everyone loves it!  It has become a tradition!  It really is WONDERFUL and I get lots of requests for the recipe after I serve it! So next time you have zucchini on hand and you don’t feel like making this awesome Double Chocolate Zucchini Bread, may I suggest this flat bread? 🙂

Ingredients

Scale
  • 1 batch of your favorite pizza dough–(or Rhodes frozen bread dough)
  • 3/4 cup cream cheese
  • to taste: dill, pepper, garlic salt, italian seasoning, etc.
  • 3/4 cup Parmesan cheese
  • 1 small red onion, cut into 1/8 inch thick rounds
  • 1 zucchini (yellow or green), cut into 1/8 inch thick rounds
  • 3 T. chopped fresh parsley or your favorite herbs -(I used Rosemary-yum!)
  • olive oil

Instructions

  1. Directions:
  2. Chop veggies. prepare dough. preheat oven to 400 degrees.
  3. Combine cream cheese with dill, garlic salt, and other desired seasonings.
  4. Brush a large baking sheet with olive oil, and stretch dough out in the pan.
  5. Spread the cream cheese mixture over the dough, sprinkle with parmesan.
  6. Arrange 1 row of zucchini slices down 1 long side of the dough. arrange onion rounds in a row
  7. alongside zucchini. repeat until all is used. brush vegetables with olive oil and sprinkle with s + p.
  8. Bake until puffy and golden brown, about 24 minutes. sprinkle with fresh herbs.
