Double Chocolate Almond Brownies

Brownies are always a big hit at my house and so I am always on the lookout for a fun new recipe to try.  This one for Double Chocolate Almond Brownies caught my eye, printed on the back of the Diamond Almond Flour that I buy at Costco.  One Sunday afternoon my boys and I were were craving a sweet treat and decided to give this recipe a try.  As you know, a couple of my boys have Celiac Disease (they can not eat gluten –which is found in all wheat flour), so this recipe was perfect for them, BUT we all loved these brownies and would recommend them to anyone!  They are a fun and unique twist on a classic, and healthier too!  Almond flour has a rich flavor and texture the compliments the chocolate well. If your family loves nuts, try sprinkling some sliced almonds on the top before baking for a pretty look and an extra little crunch. YUM!

Are you ready for summer?  Our school year is quickly coming to a close here in Chattanooga Tennessee, and my boys are SO excited!  This year my youngest son, graduates from elementary school, which feels so strange!  With 5 boys, I feel like I have always had at least one in the cute elementary school next to our neighborhood.  It is the end of an era..and it hurts my heart just a little.  It will be nice though, to have all three of my boys still at home at the same school (it is a middle high school) down the road.  But before that starts–we have a nice summer break to enjoy!  I say bring on summer!

Ingredients

Scale
  • ½ cup butter
  • 4 ounces semisweet chocolate
  • ¼ cup packed brown sugar
  • ¼ cup sugar
  • 1½ teaspoons vanilla extract
  • 2 eggs
  • 1½ cups Almond Flour
  • ⅔ cup chocolate chips

Instructions

  1. Preheat oven to 350°F
  2. Use nonstick cooking spray or butter to lightly grease an 8-inch baking pan.
  3. Melt butter and chocolate in a medium saucepan over low heat.
  4. Stir in sugars and vanilla; set aside to cool.
  5. Add eggs and beat well to incorporate. Stir in almond flour until no lumps remain, then stir in chocolate chips.
  6. Spread evenly in prepared pan and bake for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool completely before cutting into squares.

    WOw Lynelle–you have 7 sons and 2 daughters (I assume)! That is so awesome!!! Yes when our babies graduate and leave the nest it definitely pulls on a Mother’s heart strings…but it is also so exciting to see them fly! But yes, every new chapter is kind of hard.     Thank you, Melanie, these look delicious! I imagine that would be a little sad to have your youngest graduate from elementary!!! (We have 9 aged 11th grade to 1 year-7 boys) I always feel sad when they start new chapters…like when my oldest graduates next year!
