Pina Colada Raspberry PunchWe have officially kicked off summer at our house, here in Tennessee.  My boys are out of school and in full summer break mode.  It is so fun!  Yesterday we hosted our first summer gathering, with some friends over for a little backyard Luau and swim party for Memorial Day.  The menu included Kaula Pork (with a fun sauce that I will post soon), Coconut Rice, fresh fruit,  our favorite Buttermilk Rolls and more.  All the food was delicious but I think one of the biggest hits of the evening was this Pina Colada Raspberry Punch.  It is light, refreshing and has a wonderful flavor, without being overly sweet.  Everyone enjoys this punch!  I love that it is super easy to make and looks so pretty in a big glass jar or punchbowl!  It really is the perfect drink for your gatherings this summer.

Ingredients

Scale
  • 1 can frozen Pina Colada concentrate, thawed (Bicardi makes a good one)
  • 1 can frozen orange pineapple juice concentrate, thawed
  • 4 cans of water* (see directions below)
  • 4 Liters (2 bottles) of diet lemon lime soda pop (you can use regular but I actually like diet better)
  • 1 bag (about 12–16 ounces ) frozen Raspberries
  • 1 bag of pebble ice (I get at Sonic)

Instructions

  1. Pour both cans of thawed pina colada and juice concentrates into your punchbowl and stir.
  2. Use one of the *cans and fill it with water four times and add it to the mixture. Stir
  3. Add your diet soda to the mixture and stir again.
  4. Next, add about half a bag of pebble ice (I buy it from Sonic).
  5. Add your raspberries on top and stir to combine.
  6. Enjoy!

Tribute to my sweet Mom
