Happy Friday sweet friends!

I have been waiting to share these incredible NYC Levain Bakery’s Chocolate Peanut Butter Cookies (Copy Cat Recipe) with you!  They are SO good!  But first…

Sorry I have been ‘MIA’ this past week, but big things have been happening in my life!  My boys started back to school and the big news for me..I will be back in the classroom this year as well!  I was ‘called’ (asked to serve) as an early morning seminary teacher for High School students that go to my church.  We will meet at 6 am and study the scriptures every morning before school starts.  We had our seminary kick off meeting for the students and their parents this week and I am nervous/ excited for class to start next Monday!  I know this will be a huge blessing for me, and I hope it will be a blessing for the kids too!

In other news, I have been planning a trip back to New York City with my cute Mother-in-law this Fall to visit her granddaughter/my niece who lives there now.  It will be such a fun ‘girls trip’ with ladies that I love, I am really excited!  We are planning what we want to do and places we want to eat. Of course, The Levain Bakery is on my list! I still dream about these cookies!  They were seriously amazing!!  I love to make my copy cat recipes for special occasions, but I can’t wait to get to have a real one (or two) in NYC!  YUM!

If you do make this recipe, I have a couple of tips for you:

1-  Use the best quality ingredients that you can (ie real butter, cocoa powder).

2-  Do NOT overmix your batter.

3-  Pile the dough high for each cookie ( I actually probably didn’t do that enough for the cookies in these pictures –but I have learned since–they are more like the original Levain cookies if you do that).

4- Do NOT overbake the cookies.  Every oven is different, but just make sure to take them out as soon as the outside is crispy.

5-  Be patient and let them rest on the cookie sheet for at least 10 minute before you try them.

Ingredients

Scale
  • 1 cup Cold Butter, cut into small cubes
  • 1 cup Brown Sugar
  • ½ cup Sugar
  • 2 Eggs
  • ½ cup Dark Baking Cocoa (or try using half dark and half regular)
  • 1 cup Cake Flour
  • 1½ cup All-Purpose Flour
  • 1 teaspoon Cornstarch
  • ¾ teaspoon Baking Soda
  • ½ teaspoon Salt
  • 1⅓ cup Peanut Butter Chips

Instructions

  1. Preheat oven to 425 degrees.
  2. In a large bowl, cream together cold butter and both sugars, just until combined, no need to mix longer.. Add eggs one at a time, mixing well after each addition.
  3. Add cocoa, cake flour, all-purpose flour, cornstarch, baking soda, and salt and stir until combined. Stir in peanut butter chips (or you can use chocolate chips–for a double chocolate cookie–yum).
  4. Chill dough for 15 minutes or keep your chips in the freezer to automatically chill your dough when you add it!
  5. Separate dough into large balls and place on lightly colored cookie sheet. For the signature Levain look–pile them high. They are bigger than you think! You will fit 4 cookies on one large cookie sheet. The recipe will make 8 extra large cookies.
  6. Bake for 8-11 minutes or until crisp looking on the top. Let them rest for at least 10 minutes to set
