Ultimate Green Sandwich

Ultimate Green Sandwich

In keeping with my New Years resolution to eat a more plant based diet I have had some fun with different sandwich combinations and this Ultimate Green Sandwich is my current favorite!  I love it so much that I really look forward to lunchtime so I can make this wonderful sandwich again!

Let me show you how I do it:

Start with toasting some really good whole grain bread (I like Dave’s Killer seeded bread from Costco).

Then spread on Hummus (my current fave is Tribe Mediterranian with Lemon and Rosemary), press some chopped cilantro and green onion into it and on the other slice of bread spread some Goat Cheese (or try cream cheese if you are not a fan of goat cheese).

Next layer some fresh avocados on the hummus side, and sliced cucumbers on the cheese side and salt and pepper both.Ultimate Green Sandwich

Add some fresh baby spinach (or arugula would be great!)!Ultimate Green Sandwich

Close it up and slice it!  YUM!!!  Now dig in!!Mean Green Sandwich

Other Sandwiches I recommend:

Make a wrap with (veggies or your favorite deli meat) and add this wonderful Smokey Chipotle Sandwich Spread!

The BEST Slow Cooker French Dip Sandwiches (this makes a fantastic dinner) but sometimes I cheat and just buy good quality Roast Beef Deli meat.  Toast the buns with cheese, warm some au jus (beef broth) and the sliced deli then add it to the toasted buns and serve with a small bowl of the broth.  My boys LOVE it and it literals takes a few minutes!!

Meatball Marinara Sandwich (with frozen meatballs and bottle of sauce) it could not be easier!

Spanglish Inspired Egg Sandwich (remember that old movie?!). This is a quick and so yummy sandwich!

Or are you feeling adventurous??  How about Vietnamese Sandwich?  This is a great way to use leftover Pork Tenderloin.

Ingredients

  • Whole grain bread, toasted
  • Hummus
  • soft goat cheese or cream cheese
  • green onions
  • cilantro
  • cucumber
  • avocado
  • spinach
  • salt and pepper to taste

Instructions

  1. Toast your whole grain bread (sometimes I only toast one slice and make this open faced if I am not super hungry).
  2. Spread one side with hummus and one side with some soft goat cheese.
  3. Press chopped cilantro and green onion into the hummus and top with sliced avocado.
  4. Cover the goat cheese with thin cucumber slices and salt and pepper both sides.
  5. Add spinach or arugula on top of the cucumber and close sandwich.
  6. Slice and ENJOY!!
