Hello friends,

I hope you are having a good week so far.  Do you need a quick meal that will wow your family but come together in just minutes?  Well this scallops with lemon butter is the perfect recipe for you!  This could not be easier to make and is seriously restaurant quality!  Although it is such a simple recipe, it could definitely be one to serve for special occasions. Scallops can be pricey, but I get my scallops for a great price at Aldis.  Do you have an Aldis by you?  I think Costco has a good price too, but you have to buy them in bulk there. We love scallops, so buying in bulk would not be a problem at my house:)Scallops with Lemon Butter

I served this with this autumn Sweet and Spicy Spinach salad with a maple vinagrett , Grandma’s recipe French bread (from my freezer) and some fresh green beans.  So fast and my family loved it! Speaking of bread, I have been getting a lot of traffic on this easy baguette recipe.  It would be great with this recipe since it is so quick and easy too!Scallops with Lemon Butter

Ingredients

Scale
  • 1 tablespoon unsalted butter
  • 1 pound scallops
  • Kosher salt and freshly ground black pepper, to taste

LEMON BUTTER SAUCE

  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh chives

Instructions

  1. Melt 1 tablespoon butter in a large skillet over medium high heat.
  2. Rinse scallops with cold water and thoroughly pat dry.
  3. Season them with salt and pepper, to taste. Depending on the size of your pan, you may need to work in batches, add scallops to the skillet in a single layer and cook, flipping once, until golden brown and translucent in the center, about 1-2 minutes per side. Set aside and keep warm.

lemon butter sauce,

  1. melt 2 tablespoons butter in the skillet. Add garlic and cook, stirring frequently, until fragrant, about 1 minute. Stir in lemon juice; season with salt and pepper, to taste.
  2. Serve scallops immediately with lemon butter sauce, garnished with chives or parsley , if desired.

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience!
