Chewy Oatmeal Chocolate Chip Cookies

You know my great love for chocolate chip cookies, since I have lots of different chocolate chip cookie recipes and have improved upon my original classic recipe several times, until I found the best of the best Chocolate Chip recipe here. Trust me–it’s the BEST classic chocolate chip cookie recipe, hands down!!  But sometimes, I feel like an oatmeal cookie but still want some chocolate and that is where this recipe for Chewy Oatmeal Chocolate Chip Cookie comes in.

Who can resist the warm, comforting aroma of freshly baked chewy oatmeal chocolate chip cookies? These delightful cookies are a favorite for all ages, and today, I’m excited to share my tried-and-true recipe for chewy oatmeal chocolate chip cookies. With the perfect balance of oats, chocolate, and that satisfying chewiness, these cookies are sure to become a family favorite

The trick, is DO NOT OVERBAKE these cookies and let them set on the cookie sheet until fully cooled.  You must TRUST ME on this!  We always freeze the extra and I catch my boys eating them straight out of the freezer, not even bothering to defrost them first.  YUM! Most of my family does not like nuts, I think they are crazy because personally I LOVE nuts Adding pecans, walnuts or macadamia nuts would be fantastic, in my opinion!

Tools used:

Gold measuring cups (I love these–so pretty)

Cookie sheet (extra big–fits in the oven but bakes more than the average cookie sheet)

Description

With the perfect balance of oats, chocolate, and that satisfying chewiness, these cookies are sure to become a family favorite.


Ingredients

Scale
  • 1 cup butter, soft (not melted)
  • 1 cup packed light brown sugar
  • ½ cup white sugar
  • 2 large eggs eggs
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups quick-cooking oats
  • 1 cup semisweet chocolate chips
  • Optional **1 cup chopped nuts (walnuts, pecans, macadamia)

Instructions

  1. Preheat the oven to 325 degrees F (165 degrees C).
  2. Step 2
  3. In a large bowl, cream together the butter, brown sugar, and white sugar for a few minutes until fluffy.
  4. Beat in eggs one at a time, then stir in vanilla.
  5. Add the flour, baking soda, and salt; mix into the creamed mixture until just blended. Do NOT over mix.
  6. Stir in the quick oats, chocolate chips and nuts (if using).
  7. Use a cookie scoop or drop by heaping spoonfuls onto an uncreased or parchment lined baking sheet.
  8. Bake for 10-12 minutes in the preheated oven until slightly brown around the edges and just barely set in the middle .
  9. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. These cookies are best when fully cooled.

    These are so yummy! I made them with walnuts and semi sweet. Everyone loved them! So soft and chewy!
