Easy No Bake Chocolate Cheesecake Bars

Easy No Bake Chocolate Cheesecake Bars are the perfect treat to make for your loves this Valentines Day! We always celebrate as a family on the 14th with a fun dinner together which includes “Love Potion” (some kind of red drink poured over dry ice). When my boys were little I would make heart shaped pizza, but this year I am planning to make a steak dinner, twice baked potatoes , homemade rolls and these easy no bake cheesecake bars for dessert. Served with a dollop of sweetened whipped cream and fresh raspberries. My son Coleman who is gluten free will be home from his 2 year church mission just a few days before, so I will use gluten free Oreos for this dessert. We all have little Valentines and treats for each other that we take turns delivering by ringing the door bell and running in the thru the garage. It is a silly family tradition but my boys LOVE it so much and I love any excuse to shower my family with love and create fun memories together. Now we just have teenagers at home but they still enjoy our Valentines celebrations. My husband and I will have a night out alone to celebrate but it is far less busy when it is not on the 14th.

I had to dig up these old pictures of our Valentines family dinner including the famous “Love Potion”! So funny!!

Easy No Bake Chocolate Cheesecake Bars

While the Oreo crust chills, whip you cream and mix the chocolate cream cheese filling separately and then fold together until blended.

Here it is all combined and ready to spread out on the cooled Oreo crust.

I like to have the parchment paper overhang the dish so I can lift the bars out once set. It makes them so easy to serve!

All ready to chill in the fridge for 4-5 hours (or overnight) until it is set and ready to serve. This dessert is so creamy and decedent but seriously only takes about 15 minutes to make. The hardest part is waiting for it to set up!

Description

Easy No Bake chocolate cheesecake bars are wonderfully creamy with a delicious Oreo cookie crust. A gourmet treat that takes minutes to make!

Makes 9 large servings or 18 small servings


Ingredients

Oreo Crust

  • 1 1/3 cup Oreo baking crumbs (approx 14 cookies)
  • 1/3 cup butter , melted

Chocolate Cheesecake Filling

  • 1 cup heavy whipping cream
  • 1 cup powdered sugar, divided* (1/4 cup whipped cream, 3/4 cream cheese mixture)
  • 10 oz cream cheese , very soft
  • 1/4 cup sour cream
  • 8 oz semi-sweet chocolate , melted and cooled
  • 1 tsp vanilla extract

Instructions

Oreo Crust

  1. Line a square pan ( 8×8-inch or 9×9 inch) with parchment paper aluminum foil and  set aside.
  2. In a medium bowl, mix the Oreo cookie crumbs and melted butter together. Using the back of a large spoon or cup, press mixture evenly into the bottom of the prepared pan. Place in the freezer to set while preparing the cheesecake filling.

Chocolate Cheesecake Filling

  1. In a large bowl, beat the heavy whipping cream and ¼ cup of the powdered sugar until stiff peaks form.
  2. In a separate medium-size bowl, beat together the cream cheese and remaining powdered sugar until soft. Mix in the sour cream, cooled melted chocolate, and vanilla extract.
  3. Carefully fold the whipped cream into the cream cheese mixture until well combined. Spread evenly over the top of the prepared  Oreo crust.
  4. Place the cheesecake bars covered in the fridge for at least 4 hours to set. Cut into slices. Serve with fresh whipped cream and berries. You could also drizzle with chocolate sauce, if desired.

Notes

Recipe can be doubled and made in a 9×13 pan.
