Ohhhh my! These Eggnog pancakes are seriously divine…like melt-in-your-mouth delicious!! The eggnog flavor is there, but it is mild. I am not totally crazy about eggnog (like some people in my family) but I LOVE them! They are the perfect texture, super easy to make and so fun for Christmas time. We tried them for the first time this year and I will definitely be making these again this week while my family is here.

I am loving this cute pink griddle my boys gifted me for Mothers Day last year. It works GREAT! I like to butter the griddle right before spooning on the batter. I love the crispy crust is creates. YUM!! We served these Eggnog Pancakes with butter, maple syrup and some raspberries. We made them for Sunday dinner last week along with some sausage, eggs and green smoothie. Totally hit the spot!

Description

These Eggnog Pancakes are easy to make, mildly flavored and have the PERFECT texture!  Everyone LOVES them!!


Ingredients

Scale

5 Tablespoons butter, melted

1 cup eggnog

2 eggs

1 Tablespoon Oil

1 teaspoon vanilla

1 cup flour

1 Tablespoon baking powder

1 Tablespoon sugar

1 teaspoon salt

1/8 teaspoon ground nutmeg


Instructions

  1. In a small mixing bowl, whisk together the melted butter, eggnog, eggs, oil and vanilla.  Add the dry ingredients on top and whisk until combined and smooth.  Be careful not to overmix the batter (this makes your pancakes tough).
  2. Pour a scant 1/4 cup of batter on a griddle set to 375 (or medium high on the stove top).  Cook until little bubbles form and pop on the batters surface.  Flip and cook for another 2-3 minutes, until both sides are golden brown.
  3. Repeat with remaining batter.  Serve with butter and maple syrup. ENJOY!
  • Cook Time: 15 minutes

Tribute to my sweet Mom
