BBQ Chicken Secret Spice Rub

This BBQ Chicken Secret Spice Rub really gives an extra kick to bbq chicken!  It pairs wonderfully with the sweet and sticky glaze that forms from the barbecue sauce on the outside. It really is delicious and was a big hit at our 4th of July party!  For me, you just have to use chicken on the bone, with skin and all, when you grill barbecue chicken.  Boneless, skinless chicken breasts definitely have their place in the grilling world (and I’ll admit I use them 90% of the time) but let’s just give barbecue over to the “real” thing!  Grilling with chicken that is on the bone, with skin, makes for much more tender and flavorful meat.  After all, you can always peel off the skin when you eat it, but the meat underneath will be juicy and delightful!

Ingredients

Scale
  • 2 Tb paprika
  • 2 Tb chili powder
  • 2 tsp salt
  • 3–4 lb whole chicken, cut up OR 8-10 thighs and/or drumsticks
  • 1 cup Famous Daves BBQ sauce, for basting

Instructions

  1. Combine spices and rub onto chicken. Either you can grill immediately or let rest in refrigerator for up to 24 hours.
  2. Heat grill to medium heat and oil grates. Grill chicken covered, turning occasionally to prevent charring, for 20-30 minutes or until juices run clear (pierce thickest piece to the bone to test). During last 5 minutes of cooking, baste chicken with your favorite bbq sauce.

This was just as yummy as you said it would be! I overcooked the chicken a bit on the grill, but the family still loved it!

Looks delish! I love grilled chicken. And you are right, the kind with skin on and bone in are usually more tasty but of course boneless skinless are healthier for us 🙁 I will have to try out that spice rub! I wanted to let you know about my cookbook giveaway that is going on right now until July 16th. Stop on by to enter! Hope you are having a great week 🙂

I love how simple this rub is. I am definitely going to be making it. And I agree about chicken on the bone. I hardly ever make it, but I really think it is so much better. PS Your picture is awesome, Britt.

This looks so good! I am so stuck in the skinless-boneless chicken breast camp and it has been so long since I’ve done a REAL grilled chicken. Definitely on the menu for this week. Thank you so much for the kick “outside of the box!”

That looks so good and I agree for the real deal BBQ chicken you have to use the bone in, skin on. I also like to have the whole chicken cut up because its fun to have the variety. I bet the rub gives it lots of extra flavor and juiciness! Yum.

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side. Thank you Mom! You instilled in me a respect for work as well as a joy in creating delicious things. I love you! xoxo
