Mini Pancake Muffins

Last week my sweet little grandson Wesley and I made these mini pancake muffins together and they were a BIG hit with everyone! Have you ever heard of them? My friend was telling me that she loves making these for quick and easy weekday breakfasts and her kids always request them in the their lunches with a little condiment cup of maple syrup to dip them in. How fun!

Wesley loved being in charge of the toppings. We decided on mini chocolate chips, fresh blueberries and cinnamon sugar to sprinkle on top. I thought the chocolate chips would be the favorite, but I think blueberry was! They were all so good! I froze about half of them but my cute little grandsons kept requesting them and they were gone in just a couple of days!

What you will need to make Mini Pancake Muffins

  • Pancake mix (I like Kodiak Cake pancake mix)
  • Bananas
  • Eggs
  • 1 1/2 cups Milk
  • Toppings of choice (mini chocolate chips, blueberries, cinnamon sugar, oats, chopped nuts, sprinkles etc)

These freeze beautifully and will defrost easily, making them perfect for school lunches. Simply pack them straight from the freezer and they will be perfectly defrosted by lunch. You can include a condiment cup of maple syrup for dipping. They will have the coolest lunch ever and it couldn’t be easier to pack for Mom!

Description

MIni Pancake Muffins are not only delicious but perfect for busy mornings and for packing in school lunches!


Ingredients

Scale
  • 3 cups pancake mix (I like to use Kodiak Cakes pancake mix)
  • 3 overripe bananas
  • 3 eggs
  • 1 1/2 cups milk
  • toppings of choice (mini chocolate chips, blueberries, cinnamon sugar, oats, chopped nuts, sprinkles etc)

Instructions

  1. Preheat oven to 350 degrees.
  2. Smash bananas in a mixing bowl. Add eggs, pancake mix and milk. Stir until combined. Scoop into a greased muffin pan. Sprinkle with toppings of choice.
  3. FOR MINI MUFFINS: Bake for 12-14 minutes.
  4. FOR REGULAR-SIZE MUFFINS: Bake for 16-18 minutes.
  5. Serve with maple syrup for dipping.

Notes

  • Makes about 48 mini muffins or 16 regular-size muffins.
  • Any powdered pancake mix will work.
  • To freeze, place muffins on a cookie sheet and flash freeze for a couple hours. Then throw them into a freezer bag or airtight container.
  • These are great in school lunches! Send with a condiment cup of maple syrup for dipping.

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience!
