Lemon Poppy Seed Scones
Description
Bright & Buttery Lemon Poppy Seed Scones are the perfect morning pick-me-up or anytime treat!
Ingredients
- 2 cups flour
- 1 Tb baking powder
- 1/2 tsp salt
- 1/3 cup sugar
- 1 Tb poppy seed
- zest of one lemon
- 1/2 cup firm butter, cut into pieces
- 3/4 cup milk or buttermilk
Glaze
- 1/2 cup powdered sugar
- 1 Tablespoon fresh lemon juice
Instructions
- Preheat oven to 425 degrees F.
- Mix flour, baking powder, salt, sugar, poppy seeds, and lemon zest.
- Cut in butter using pastry blender or crisscrossing knifes, until mixture is the size of small peas.
- Using a fork, slowly pour buttermilk into flour mixture and stir gently until ball forms.
- Turn dough onto lightly floured surface and knead lightly 10 times.
- Pat or roll in 9 inch circle and place on cookie sheet lined with silpat or parchment paper.
- Using a pizza cutter, cut into 8 wedges and place wedges about 2 inches apart.
- Brush with milk or an egg wash (egg mixed with 1 TB water, milk or cream)
- Bake for 12-15 minutes or until golden brown.
- While the scones back make the glaze by mixing the lemon juice with the powdered sugar.
- Drizzle the glaze on the warm scones. Allow to cool and enjoy!
