Coconut Ice Cream

This Coconut Ice Cream is a coconut lover’s dream! It is creamy with a rich coconut flavor.  I prefer the coconut toasted and sprinkled on top, but I really like it mixed into the ice cream, too.  A fun variation is to add 1/2 cup of chopped macadamia nuts for a little crunch and a tropical feel!  You will think you are in Hawaii with just one bite!  This ice cream is wonderful over brownies too! This is the perfect summer dessert that your whole family will love!

Ingredients

Scale
  • 1 cup milk
  • 1 (14 ounce) can cream of coconut*
  • 1 1/2 cups heavy cream
  • 1 1/2 cups sweetened flaked coconut (optional)

Instructions

  1. Combine the milk and cream of coconut in the container of a food processor or blender, and mix thoroughly. Stir in cream and flaked coconut.
  2. Pour into the container of an ice cream maker, and freeze according to the manufacturer’s instructions.

Makes 8 servings

*A tip on cream of coconut: I went to four stores and asked countless store employees where to find this product before I found someone who knew what it was. Almost every store has it, but it is in the drink mixers section – not the international food section. Make sure to get cream of coconut, not coconut milk.

    Mindy, yes, I was so happy when I tried it again! It was so much thicker even after only ten minutes. I just made the plain vanilla from the owners manual, but I assume it will work better with this heavenly coconut. Thank you and your sisters for this awesome website. I use it all the time. And thanks for your ice cream help. I raved about the ice cream maker so much my sister got one for my parents for their birthdays (one day apart). Thank you thank you thank you!!!!!

    Megan, the problem was almost definitely that you didn’t freeze your bowl long enough! I don’t know why I didn’t think to ask you that when I answered your question last. I should know since I’ve done the same thing twice. (You’d think I would learn my lesson after the first time!) Both times that I tried to make ice cream without keeping my freezer bowl in the freezer for at least 24 hours prior, the ice cream would not set up all the way. I’ll bet the next time you make ice cream it is going work awesome! I’ll keep my fingers crossed. 🙂

    Thanks! I will try it again, and hopefully it will work better. I only froze the bowl for about 12 hours, but I heard no liquid when I shook it. Our power went out for a few hours of that as well so hopefully round two will go better. I always love coconut too, but I keep finding my love grow the more awesome recipes I find! Thanks for this one and for answering my question!

    Megan, I too am addicted to coconut… but pretty much all the time. I’m so glad that you liked this ice cream. But I’m bummed out that your ice cream maker doesn’t work right! My mom had that same problem with hers when she bought it last year. I wonder why? I think two of my sisters have the version that we linked on Sisters Secrets, and I think it works great for them. I have a different model (I found this link on amazong to show you: http://www.amazon.com/Cuisinart-ICE-25-Classic-Frozen-Yogurt/dp/B0009VELUK/ref=sr_1_20?ie=UTF8&qid=1338349772&sr=8-20.) Mine gets the ice cream to the consistency of soft serve ice-cream. About the same consistency as the old fashioned ice cream makers with the salt and the ice. If I want the ice cream to be hard like the ice cream in the store, I do have to pop it in a tupperware in the freezer for while. Hope that helps!

    Oh my, I’m addicted to coconut right now and I am so glad this was on your sidebar….it is so good. I just bought a cuisinart ice cream maker, and since it’s in your sisters secrets….I figured one of you can answer this. When you make ice cream in it, after the 20-30 minutes is the ice cream really thick enough for you to eat? I made mine and it was like a thick soup after 30 minutes so I froze it and it’s perfect….I just wonder if it’s really thick enough for anyone to eat or if everyone else has to freeze it too. I also love the coconut toasted and sprinkled on top. Oh, it was heavenly. Thanks for sharing another winner.

    This ice cream sounds delicious! I will definitely be trying this recipe sometime soon….it reminds me of Hawaii, with the macadamia nuts. YUM!
