Cozy One-Pot Lasagna Soup (A Family Favorite)

If you love lasagna but don’t love all the layering, waiting, and dishes that come with it—this Lasagna Soup is about to become your new go-to dinner. It has all the classic flavors you crave: savory Italian sausage, rich tomato broth, tender pasta, and a creamy, cheesy topping that melts right into the bowl. Best of all, it comes together in one pot and is perfect for busy weeknights or cozy weekends at home.

This is the kind of meal that fills the house with the best smells and has everyone asking, “When’s dinner ready?” Serve it with crusty french bread or garlic breadsticks and you’ve got a comforting, satisfying meal the whole family will love.

My parents came to visit for Christmas and I served this Lasagna Soup for dinner one cold night and everyone loved it!  My Mom proclaimed it to be her new favorite soup and insisted that I post it on Mel and Boys Kitchen! Now that is saying something because she makes some seriously good soups!  It is only two months later, but I am finally following her recommendation and sharing the recipe with you!  This soup is a fun twist on a classic… lasagna in a bowl, but better!  The broth is rich and flavorful and the cheese topping is divine as it melts into a wonderful creamy addition!  This a perfect soup to warm you up on a cold winter night!  I have brought this to people who needed a meal twice now with rave reviews!  It is fun, different and incredibly satisfying!

Description

This Lasagna Soup soup is a fun twist on a classic… lasagna in a bowl, but better!  The broth is rich and flavorful and the cheese topping is divine as it melts into a wonderful creamy addition!


Ingredients

Lasagna Soup

  • 1 lb ground Italian sausage

  • 1/3 cup chopped onion or 1-2 tablespoons dehydrated chopped onion

  • 2 teaspoons minced garlic

  • 2 teaspoons dried oregano

  • 1/4-1/2 teaspoon crushed red pepper flakes (to taste)

  • 2 tablespoons tomato paste

  • 2 cans (15 oz each) Italian diced tomatoes (petite dice preferred)

  • 2 bay leaves

  • 6 cups chicken stock

  • 7-8 lasagna noodles, broken into bite-size pieces

  • 1/4 cup finely chopped fresh basil

Cheese Topping

  • 8 oz ricotta cheese (or cottage cheese)
  • 1/2 cup grated Parmesan cheese

  • Pinch of freshly ground black pepper

  • 1 cup shredded mozzarella cheese, plus extra for garnish


Instructions

How to Make Lasagna Soup

  1. Brown the sausage
    In a large soup pot or Dutch oven, cook the Italian sausage over medium heat until browned and fully cooked. Break it up as it cooks. Drain excess grease if needed.

  2. Build the flavor
    Add the chopped onion, garlic, dried oregano, and red pepper flakes to the pot. Cook for 2–3 minutes, stirring, until fragrant and the onion softens.

  3. Add the tomato base
    Stir in the tomato paste and cook for about 1 minute to deepen the flavor. Add the diced tomatoes and bay leaves.

  4. Simmer the soup
    Pour in the chicken stock and bring everything to a gentle boil. Reduce heat and let it simmer for 10 minutes.

  5. Cook the noodles
    Add the broken lasagna noodles and simmer for another 10–12 minutes, stirring occasionally, until the noodles are tender.

  6. Finish with basil
    Stir in the fresh basil and remove the bay leaves. Taste and adjust seasoning if needed.

    Make the Cheese Topping

    In a small bowl, mix together the ricotta, Parmesan cheese, black pepper, and shredded mozzarella. This creamy mixture is what makes the soup taste just like classic lasagna.

    How to Serve

    Ladle hot soup into bowls and top with a generous scoop of the cheese mixture. Sprinkle with extra mozzarella if desired and let it melt into the soup. Serve with crusty bread, garlic bread, or a simple green salad.

Notes

I like to double the recipe and freeze half for later. If you are going to freeze. Do not add the noodles to the soup, just cook them in a separate pot. I froze the soup and topping separate. When reheating add fresh uncooked noodles then. Freezes well!

    this soup has found it’s way in to our regular rotation — it’s that good! tonight we are trying it gluten free with spiraled zucchini instead of noodles!! yum! Thanks for the recipe!

    HI Kerri,
    I usually put them in either a glass pyrex with a plastic lid–I have several that I got at Target and Walmart or if I am not sure I will get it back, I put it in a disposable rubbermaid container with a lid. I usually put it in a basket or in a baking dish to keep them from falling over during transport. To be honest I have had a few spills–but not too bad usually if you make sure the lid is on securely:)

    Thanks for sharing this recipe. When you bring soup as a dinner for those in need, how do you pack it up for transport? I have some great soup recipes but I never know how to get it there.

    Welcome back! I was coming on to view your granola recipe to make with my daughter (which I made too many times to count when my husband was deployed for a year – it’s amazing and my entire family loves it!) and I saw a new recipe posted!     This soup looks fantastic. It is perfect for the cold winter months. I have really missed your posts. You girls have the best recipes! I really miss your other mel and boys blog, too, and all of the inspiration it provided. I hope you begin posting there, also. We have all Apple products here and have had them for years and love them. I love my MacBook Pro laptop. I think you will like them. I bought the service plan for my computer where the Apple techs are available to you for any problems and it has saved my life so many times. They are very knowledgeable and it was well worth the money to buy the plan. Good luck!
