Lemon Meltaways

These cute lemon meltaways are like one last HURRAH to the sunny and bright days of summer!  As much as I really want to start making pumpkin bread, soups and apple crisps, here in the South it is really still Summer.  Where I live, September is humid and hot (in the 90s), and we are in our pool almost every afternoon when school lets out.  I think Autumn  officially starts during the 3rd week of September and hopefully by then it will feel more like it!  Kinda of sad….but I am going to put off my Fall baking for a few more weeks and try to fully enjoy the last tastes of summer.   

Last week I was trying to decide what to send into the school for ‘Happy Cart’, a teacher appreciation event at my boys elementary school, where parents send in treats and a cart is loaded up and taken from room to room where they teachers can enjoy the goodies.  I settled on these sweet, Lemon Meltaways—bright and buttery little bits of summer goodness.  I made them smaller than usual and the glaze a bit thicker creating  a tangy little pool of lemon in the center, but you can thin the glaze more and drizzle it across the cookie for another look that is equally delicious!  These cookies are melt in your mouth wonderful! If you are a fan of lemon and shortbread, then these are for you!  I hope you are enjoying the last days of summer too!

Description

These cookies are melt in your mouth wonderful! If you are a fan of lemon and shortbread, then these are for you! 


Ingredients

Scale
  • 1 cup butter
  • ½ cup powdered sugar
  • 1 ½ tsp lemon juice
  • ½ cup cornstarch
  • 1 2/3 cup flour

Glaze/ Icing:

  • Powdered Sugar
  • Lemon Juice
  • Yellow food coloring, if desired

Instructions

  1. Using a stand mixer to by hand throughly cream the butter and sugar together. Add remaining ingredients and stir to combine. Form dough into balls, then press down with the palm of your hand to flatten and shape the cookies.
  2. Bake at 350 for 9-10 minutes. Cookies are done when top starts to crack. Edges may be slightly browned.
  3. Let cool completely.
  4. To make the glaze/ icing, put some powdered sugar in a bowl, add some lemon juice and food coloring, mix until smooth. The measurements depend on how much juice you get from your lemon and how you want to top the cookies ( a thinner glaze or a thicker icing as pictured above). Start with a cup of powdered sugar and start to stir, keep adding powdered sugar slowly until you get the consistency you desire. Go slowly with the powdered sugar if you don’t have extra lemon juice–if it ends up too runny, you can always add more powdered sugar.
  5. Either spoon some icing on the center of the cookie, or a thinner glaze back and forth over the cookie. Allow the icing to set or dry for a few minutes and then enjoy!!
