When it comes to simple yet incredibly delicious weeknight dinners, this Rosemary Honey Mustard Chicken recipe is always a go-to option. I am so excited to share this recipe with you!  It is one of my favorite dinners for more than one reason.  First of all this dish tastes fantastic, like restaurant quality good.  No one would ever guess how simple this chicken is to make! You can impress your family and guests and literally only spend about 30 minutes in the kitchen!

I love this recipe with fresh rosemary, which grows in my yard abundantly, but you can absolutely use dried rosemary or it can be left out.  It really is great even without the rosemary.  The sauce the chicken bakes in is wonderful served over rice.  Trust me when I say, that you and your family will love this dinner.  This recipe is perfect for a fancy dinner party and for those nights when you are short on time and need a quick dinner for  hungry children.  This dish can also be made ahead of time and can be baked straight from the fridge, just add some additional baking time (approximately 15 minutes, more or less depending on your oven).  Here is to quick and wonderful dinners!  Enjoy!

Ingredients

Scale
  • 1/2 cup of mustard ( I like to use dijon mustard or sometimes half course ground)
  • 1/2 cup honey
  • 3 teaspoons extra virgin olive oil
  • 1/2 of a small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 1/2–3 pounds boneless skinless chicken tenderloins
  • salt and pepper
  • 3 – 4 small sprigs of fresh rosemary

Instructions

  1. In a small bowl, combine the mustard, honey, and 2 teaspoons of the olive oil.
  2. In a sauté pan, add 1 teaspoon olive oil.
  3. Add the onion and sauté over medium heat until golden and tender, about 5 minutes. Add the garlic and sauté for an additional 1 – 2 minutes, until fragrant.
  4. Pour the onion and garlic mixture into an oven safe dish and place the chicken on top. Salt and pepper the tops of the chicken according to your personal preference.
  5. Pour the honey mustard mixture on top of the chicken and place the rosemary sprigs around the chicken.
  6. Bake the chicken covered at 400 degrees F for 15-20 minutes (depending on your oven–you will have to watch and check it the first time). Then remove the cover, baste the chicken with the sauce, and continue to cook for an additional 10 minutes uncovered, or until the chicken is browned on top and cooked through. Serve over rice or mashed potatoes.
