It is finally starting to get a little chilly here in the South and I couldn’t be happier about it!  The second it begins to cool off, I start craving soup!  I guess I am not the only one, because I was invited to a little ‘Recipe Night’ gathering last week where the theme was soups!  All of the soups were wonderful, but I think my favorite was a cauliflower cheese soup.  I couldn’t wait to make it when I got home and found the perfect opportunity since my sister Brittany is here.  We made it for lunch one day and it really hit the spot!  We both agreed over our second bowls that this soup was divine!

Creamy Cauliflower Cheese Soup is a heartwarming dish that’s perfect for a cozy night in or as an appetizer for a special dinner. Its velvety texture and the combination of rich, cheesy flavors make it a favorite for both adults and kids. Description

Creamy Cauliflower Cheese Soup is a heartwarming dish that’s perfect for a cozy night in or as an appetizer for a special dinner. Its velvety texture and the combination of rich, cheesy flavors make it a favorite for both adults and kids. 


Ingredients

Scale
  • 2 tablespoons butter
  • 1 white onion, diced
  • 2 teaspoons minced garlic
  • ¼ cup flour
  • 2 cups milk (or use part half and half for a creamier soup)
  • 3 cups chicken broth (or vegetable broth)
  • 2 teaspoons salt
  • 1 head cauliflower, chopped
  • 1 tsp dijon mustard
  • 1 cup shredded pepperjack cheese
  • 2 cups shredded sharp white cheddar cheese

*the cheese is a personal preference–I really like the mexican blend from Costco–not as flavorful but I always have it on hand and it melts beautifully


Instructions

  1. Melt butter in a large pot. Add garlic and onion and sauté until onions are tender. Add flour and stir until mixture clumps up.
  2. Gradually whisk in milk. Add broth, salt, and cauliflower. Simmer for 15 minutes or until cauliflower is tender.
  3. Use a hand held immersion blender or you can transfer soup to a blender and pulse until smooth. If you use the blender then return soup to pot. Add cheeses and stir until melted and combined with soup. Serve with extra cheese if desired. My boys like crumbled bacon on top.

    Yes this soup is delicious!!!! Very creamy and cheesy. The ground pepper on top added a little punch that I loved too.

    Hi Cheryl,
    Yes this warm weather is killing me this fall:) I am sure I should enjoy it but I really want to pull out my sweaters and feel a chill in the air! Yes Recipe Night is SO fun! We pick a theme and everyone brings there favorite recipes to go with that theme. So we get to sample everyones favorite recipes and go home with a copy of their recipe. I love it!

    Yes the mustard is very subtle but wonderful in this soup. And I couldn’t agree more–I love soup:)

    I use a similar recipe from The Girl Who Ate Everything and even my kids love it! Yours has mustard though and I should definitely try different cheeses like yours! Can’t have too much soup. 😉

    Thanks so much Lynelle! I know we are back to warmer weather the next week–darn it! It is in the 80s today! I may have to hold off on wearing my sweaters! Have a great weekend!!

    This looks yummy! I am so happy, too, about cooler weather…soups and sweaters and turning leaves. In St Louis, it’s supposed to be a little warmer than normal the next week but I’m hoping they got the forecast wrong!😌 Thanks for posting this. It is so fun to see your recipes.
