My friend Jenny gave me this fantastic avocado salsa recipe after she brought it to a BBQ one time and I LOVED it! I am really “into” making healthy chip dips for lunch. So much better than a PB & J with the kiddos! Sometimes I eat this with tostitos scoops and sometimes I eat it on top my salad, or even as a side dish with our dinner! (It is great on grilled chicken or veggies) Yum! This avocado salsa is a winner! Thank you Jenny!

Looks so good! I totally feel like having some right now… wish I had the ingredients on hand. PS this is Mindy, but I don't feel like changing from Griff. 🙂

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side. Thank you Mom! You instilled in me a respect for work as well as a joy in creating delicious things. I love you! xoxo
