Greek Quinoa with Quinoa

This Greek Quinoa with Avocados is such a great salad.  It is packed with nutrient rich ingredients and full of flavor.  Perfect for the sunny spring days we’ve been having this week!  Did you know that Quinoa is naturally high in protein?  It is a great as a vegetarian dish, but you could add some diced or shredded chicken to make a more hearty meal out of it.  This is the perfect side dish for some grilled fish, chicken or steak. Either way you’ll love it!

We had this today and it was delicious! I will definitely be making it again. It was fast too! Only 20 minutes tops – do all the chopping while the quinoa is cooking. Thanks for another great recipe!

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side. Thank you Mom! You instilled in me a respect for work as well as a joy in creating delicious things. I love you! xoxo
